Salsa is a national staple in Mexico; you cannot eat out without being served the ‘secret’ recipe of the house. This is my ‘not-so-secret’ recipe, which involves roasting your ingredients to give a rich and smoky depth. This one is a bit spicy, but can be adapted to be milder.
