  • Lets start with – My name is Tara and I don’t do Meatless Mondays. UNTIL NOW!!! I honestly was thinking “Meatless Meh” when I saw this recipe but WOWZERS!! This dish was incredible! The lemon zest stirred through was a delight. Sharon Maree mentioned this would be good with Gnocchi, HELL YEAH!!! If I needed to serve up a dish for a large crowd I would definitely consider pouring this entire dish over a platter of gnocchi. It would feed a village. The other suggestion of serving with a poached egg at breakfast, bit of sourdough for a dippy dip – absolutely!! This was up there with Lazy Lasagna for me. – Tara L.
