  • Boost the protein – Replace sour cream with 1 cup cottage cheese blended with 1 Tbsp white vinegar. To increase chicken to 1 kg or 2.2 lb, cook using the conventional or slow cooker methods. Serve with protein pasta.
  • Dairy-free – Dairy-free Greek yoghurt.
  • Low carb – Replace cornflour with xanthan gum.
  • Lower calorie – Halve the butter. Use chicken breast. Use low-fat sour cream or Greek yoghurt or blended cottage cheese.
  • Paleo – Replace cornflour with xanthan gum. Use dairy-free Greek yoghurt. 
  • Go veggie – Double the water. Replace chicken with half mushrooms and 1 tin butter beans. Use vegetable stock concentrate.
  • Low Fodmap – Omit garlic. Use garlic infused olive oil and compliant stock concentrate. Replace onion with leek (green part only).

How to Cook

  1. Saute the garlic and onion.
  2. Cook the chicken in the sauce.
  3. Add capsicum and cornflour mixture to thicken.
  4. Stir through sour cream.

  • Fridge – Store in the fridge for up to 3 days.
  • Freezer – This recipe freezes beautifully.
  • Make ahead – freeze cooked for up to three months.

FAQs

Can I omit capsicum?
It is really a chicken and capsicum dish, but yes you can if you really wish. Perhaps try replacing with some green beans.

Is it spicy?
No, not at all. Just really full flavoured. Make sure your paprika isn’t Hot Paprika.
