This chicken stroganoff is everything you love about the traditional beef recipe, except it’s super skinny and on the table in under 15 minutes – how can it get any better? This is now a regular meal in my house, and it’s a great way to get my kids to eat more mushrooms which are one of the most nutritious foods around.

- 200 g Swiss brown mushrooms
- sour cream - or Greek Yoghurt (dairy-free is required)
- Chicken Stock Concentrate
- tomato paste
- Worcestershire sauce
- Dijon mustard
- cornflour
- onion powder
- garlic powder
- smoked paprika
- flat leaf parsley leaves
