There is something so comforting about a big bowl of Miso Ginger Chicken & Brothy Rice.

This isn’t your usual chicken and rice. Jasmine rice, tender chicken and bok choy are served with a warming ginger and white miso broth, then finished with a sweet and savoury miso ginger sauce spooned over the chicken.

You can add as much or as little broth as you like, depending on whether you want lightly brothy rice or something closer to a comforting rice soup.

Finish it with spring onion and a spoonful of our Ultimate Chilli Crisp if you like a little heat.

What is Brothy Rice?

If you’ve never had brothy rice before, think of it as sitting somewhere between a rice bowl and a rice soup.

The cooked jasmine rice is divided between bowls and the hot miso ginger broth is ladled over the top.

You control the consistency. Add just enough broth to soak into the rice while leaving some liquid in the bottom of the bowl, or be more generous if you prefer something soupier.

It’s particularly good with the sliced chicken and bok choy soaking up all that broth.

What Does Miso Ginger Chicken Taste Like?

This dish is all about savoury, warming and umami flavours.

Fresh ginger and garlic flavour both the sauce and broth, while white miso adds savoury depth without overpowering the other ingredients.

The chicken sauce combines miso with rice wine vinegar, honey, soy and a little brown sugar, giving you a balance of savoury, sweet and tangy flavours.

The broth is lighter, with ginger, Chicken Stock Concentrate, white miso and sesame oil creating a warming base for the rice.

For the chicken and sauce:

  • Chicken breast
  • Fresh ginger
  • Garlic
  • White miso paste
  • Rice wine vinegar
  • Honey
  • Soy sauce, tamari or coconut aminos
  • Brown or coconut sugar

For the brothy rice:

Finish with sliced spring onion and Ultimate Chilli Crisp if desired.

What is White Miso?

White miso is a fermented soybean paste with a milder, slightly sweeter flavour than darker varieties of miso.

It adds savoury umami flavour to both the sauce and broth in this recipe.

One Thermo Cooker, Chicken, Rice AND Greens

The Thermo cooker method makes particularly good use of the different cooking levels.

The seasoned chicken cooks in the steaming tray while the ginger broth cooks below.

The rice is then cooked in the simmering basket using that flavourful broth, and the bok choy is added to the steaming tray towards the end.

Once everything is ready, the broth is finished with miso and sesame oil before the bowls are assembled.

Can I Use Different Asian Greens?

Absolutely.

We’ve used bok choy, but this recipe is an easy one to adapt depending on what you have available.

Use your favourite quick-cooking Asian green vegetables and adjust the cooking time as needed.

You can also increase the chicken to 1 kg if you’d like more protein or you’re feeding particularly hungry people.

Dietary & Recipe Variations

LOW CARB / SUPER SKINNY
Omit the rice and honey, use compliant sweetener and serve with cauliflower rice. We’ve included instructions for cooking the cauliflower rice with some of the chicken cooking liquid for extra flavour.

PALEO
Use cauliflower rice and apple cider vinegar, with alternatives to the miso in both the sauce and broth.

VEGETARIAN
Replace the chicken with extra-firm tofu steaks and use Vegetable Stock Concentrate.

LOW FODMAP
Omit the onion powder and garlic, use the suggested ginger and garlic-infused olive oil substitutions, compliant Stock Concentrate and only the green part of spring onion.

HALVED / DOUBLED
When halving in the Thermo cooker, keep the full quantities of sauce and broth. For a double batch, use the conventional method.

What to Serve with Miso Ginger Chicken & Brothy Rice

This one is designed to be a complete meal in a bowl.

Start with jasmine rice, then add the sliced chicken and bok choy.

Ladle over your desired amount of hot miso ginger broth, then drizzle that sweet and savoury miso ginger sauce over the chicken.

Finish with:

  • Sliced spring onion
  • A drizzle of sesame oil if desired
  • Ultimate Chilli Crisp for some extra heat and crunch

Then grab a spoon. You’ll want some of that broth with every mouthful.

FAQs

What does ‘brothy rice’ mean?

Brothy rice sits somewhere between a traditional rice bowl and a rice soup. The cooked jasmine rice is served in a bowl and hot miso ginger broth is poured over it. You can add a little broth or a lot depending on how soupy you like it.

Can I use chicken thighs instead of chicken breast?

Yes, boneless chicken thighs should work well with these flavours. However, because the published recipe has been developed using chicken breast, cooking times may need to be adjusted. Whichever cut you use, make sure the chicken reaches an internal temperature of 74°C before serving.
