This recipe works well as part of a Mexican Feast, in wraps or with Mexican Red Rice & char-grilled corn, capsicum and sweet potato.

A Little Taste of Mexico: Colorado Mole

Mole, pronounced ‘moh-lay’, is Mexico’s national dish. When we visited Mexico I discovered that proper Mexican Mole is not just a “chicken chocolate sauce” like we usually find here in Australia, but rather a complex dish with many different ingredients. To make things even more interesting, there are many different kinds of mole with varying ingredients that traditionally takes days to make. The Mole Colorado is known as the ‘red’ mole and while its ingredients list is one of the simpler ones, it was my favourite out of all 7 Oaxacan Moles I was able to get my hands on!

Ingredients

  • fresh garlic
  • white onion
  • dried ancho chilli
  • dried guajillo chillies
  • sesame seeds
  • cinnamon powder
  • dried oregano
  • allspice
  • dried raisins
  • Oaxacan chocolate or 70% dark chocolate
  • chicken thigh or breast

Notes

Specialty chillies can be purchased from specialty delicatessens, Mexican Grocers and our online affiliates.
Vegetarian Variation:
Use vegetable stock & omit chicken. Use sauce for enchiladas, pour over roasted pumpkin, eggplant, chargrilled corn and capsicum. Alternatively, replace chicken with your choice of vegetables and/or beans.

Colorado Mole Thermomix Recipe

  1. I think this may be one of the under-rated recipes of ALTOM!!! We were a little hesitant to try it… I mean – really – chocolate chilli chicken?

    But damn! It is AMAZING!!! Probably our favourite in the entire book – yes – even ahead of the chile con queso! If you haven’t made it yet… you really should. It’s such a beautiful and delicate blend of flavours. Great work as always, Nik!!!

  2. I was nervous about the idea of chocolate in a savoury dish – now I wish I hadn’t waited so long to try it!! Yum! Served with the Mexican red rice which really complemented it. (I did make some minor substitutions – used brown onions instead of white, dried dates instead of raisins, and 1/2 ground cloves + 1/2 nutmeg instead of the measure of allspice. Worked a treat, we loved it and looking forward to sourcing these for an even better outcome next time!)

  4. This really is the most delicious dish! The flavours are like a sweet/smokey/spicy blend and the texture of the sauce is so beautiful and silky smooth. Highly recommend!!

  5. I wanted to try something different. Balked at the raisins in the recipe as well as cinnamon and all spice but this is an absolute winner. I’ve never had anything like it!!

  6. Cooked the Colorado Mole with some trepidation fearing it may be too sweet. The taste was sensational and will definitely cook again. Kept going back for spoonfuls of the sauce. Thanks Nik.
