Our Green Chicken Salad in SkinnyAmerica is not your average classic American Chicken Salad!

Incredibly refreshing with the pops of sweetness from the grapes, now I am NOT a lover of fruit with meat but this honestly works. If you are chicken though, they are optional or you can also swap for dried cranberries.

We’ve taken the classic chicken salad and lightened it up to not be so mayonnaise heavy. 

Lower in calories by replacing some of the mayonnaise with Greek yoghurt and packing it FULL of herbs and lettuce. 

This salad is so refreshing and perfect for lunch or dinner on a hot Summer day.

To make this salad we poach the chicken in chicken stock in the Thermomix or gently on the stovetop, this maximises the flavour and the juiciness

Serve in a sandwich, in lettuce cups or as a salad.
