Years ago, I had lunch with Sian and tried the most amazing Pomegranate Molasses Lamb. It was generous chunks of glazed, pull apart tender lamb on a bed of Labneh and piled with fresh herbs.
I knew then I had to create my own version – and I’m thrilled it found its place in this book. This Lebanese-inspired dish is a true show-stopper that never fails to impress (me included!). I definitely recommend planning ahead and making the Labneh the day before.
Although this recipe requires a little bit of preparation, it really is very easy and definitely worth it. We start with the Pomegranate Molasses…
Step 1 – Make or Buy Pomegranate Molasses
We have a very easy recipe to make Pomegranate Molasses using pomegranate juice in the SkinnyMediterranean cookbook. It will take approximately. 60 minutes to reduce the juice down to the glossy, sweet, tangy liquid gold. This will keep in the fridge for months. I like to make it the day before and also prepare my Labneh.
Step 2 – Prepare the Lamb & Marinade
Combine the marinade and coat the lamb shoulder. I recommend marinating for 2 hrs or overnight if you have time.
Step 3 – Cook the Lamb
Allow yourself 5 hrs to cook the lamb, you want the lamb should to be pull apart tender. If your lamb is a little bigger, allow a little extra time. You can always wrap in a towel and keep warm until ready to serve,
Step 4 – Don’t forget the Pomegranate Molasses drizzle!
Trust me! You will want more of that sweet, tangy Pomegranate Molasses when serving the lamb.

What you will need:
- 2kg lamb shoulder, bone-in preferred
- Chicken Stock Concentrate
- cinnamon powder
- coriander powder
- cracked black pepper
- cumin powder
- fresh ginger
- garlic
- honey
- olive oil
- Pomegranate Molasses
- salt
- smoked paprika
Tips for Success:
- Prepare the sides in advance and marinate the lamb overnight for maximum flavour.
- Don’t skip the Pomegranate Molasses. It really makes this lamb shine.
