This Spiced Carrot Salad balances sweet carrot with herbs, warm Middle Eastern spices, and a pop of tangy feta. It ticks all the boxes of the Mediterranean way of eating with veggies, olive oil, and plenty of flavour.

After developing this recipe I honestly couldn’t stop eating this Spiced Carrot Salad! It wasn’t until afterwards that I was told about the numerous health benefits from eating raw carrots. 

I like to make this salad with the Za’atar Bean Salad, Fattoush Salad & the Cauliflower Tabouli for a beautiful Mediterranean style salad spread to serve at BBQ’s or dinners with roasted meats like the Slow Cooked Pomegranate Molasses Lamb.
