All in One Chicken Dinner Thermomix Recipe

Ingredients

Seasoning Ingredients

  • 1 clove garlic - peeled
  • 20 g oil of choice
  • 1 Tbsp sweet/mild paprika
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1 pinch pepper and cayenne

Mash Ingredients

  • 600 g sweet potato - peeled, cut into small cubes
  • 30 g butter - optional
  • 30 g cream - optional
  • 1/4 tsp salt

Remaining Ingredients

  • 800 g liquid chicken stock - or 1 tbsp stock concentrate + 800 g water
  • 500-700 g chicken breast - sliced in half length ways
  • 400 g vegetables of choice
  • 2 Tbsp corn flour or tapioca flour - dissolved in 1/4 cup of water

Instructions

  • Add garlic to mixer bowl, chop for 2 sec/speed 9/MC on. Scrape bowl down.
  • Add remaining seasoning ingredients and mix for 5 sec/speed 3/MC on. Set aside.
  • Without washing the bowl, add the liquid stock and set the timer for 12 min/100°C or 212°F/speed 3/MC on.
  • While the stock is heating up, prepare your sweet potato and place it into the simmering basket. Prepare your chicken by coating well in the reserved seasoning paste and placing in the deep steaming tray. Prepare your veggies and place into the flat steaming tray.
  • Put the simmering basket with the sweet potato into the mixer bowl and set the timer for 20 mins/steaming temp/speed 4. Put your steaming trays with the chicken and vegetables in place. You may need to turn your chicken over half way through. If you are feeling organised, clean your kitchen!
  • When the chicken and vegetables are cooked, set aside in a thermal server to keep warm. Set the sweet potato to the side.
  • Retain 500 g or 17.6 oz of the liquid stock in the bowl and add your corn flour mixture, cook for 5 min/100°C or 212°F/speed 2/MC off.
  • When the gravy has thickened to your liking and seasoned to your tastes, remove it to a gravy boat to keep warm and without washing the bowl, put your mash ingredients, including the reserved sweet potato, into the bowl and blend for 10 sec/speed 5/MC on.
  • Insert butterfly and whip for 20 sec/speed 3/MC on.
  • Serve.

Notes

You don't have to turn the sweet potato into mash if you don't want to.
This wont work as mash with white potato, but you can serve white potato as chunks with butter and salt on top.
If you are using soft vegetables, like broccoli or zucchini, add it in the last 10 minutes of cooking time - they dont need the full 20.
Bellini Users
Use blunt blade with this recipe.
At step 5 use ST temp, speed 3 and put a tea towel over your steamer if using an Intelli, use 130°C or 270°F and speed 4 if using a Supercook.
At step 7 cook for longer, until thickened.

    Loved the rest too, although the gravy was verrrry liquidy and thin and not really my preferred consistency.

    Was a big hit and super easy so will definitely make again. I was about 100gm short with sweet potato so added some white to make it up and it still worked perfectly. I could of sat and eaten all the mash to myself, so yummy.

  14. thanks once again Nik – easy instructions and an easy and delicious dinner at the end! I did this with carrots, beans and cauli and put them all on at the same time when the chicken went on. Also had normal potatoes cut finely for the mash. 🙂

  16. Yummo. This meal was a hit for our family of five. Nice and easy and it tasted delicious. I didn’t add the cream and butter to the sweet potato mash.

  17. This was so easy to make and we loved the taste of the chicken and the gravy. The mash was light, creamy and fluffy and will definitely be making this dinner again. I steamed corn on the cob and broccoli as my veggies, next time I will add the broccoli after 10 mins of steaming the chicken. And yes, I even had time to clean the kitchen while waiting!   18. A great meal and smooth mild gravy that would suit young children or people who don’t like heat in their meals. I put sliced carrot in the varoma tray and the chicken to cook for 10 mins so I wouldn’t forget to turn it (I’m a bit forgetful sometimes!). In the second lot of 10 mins, I added broccoli to the carrot tray.
    I also omitted the sweet potato as we’re keeping our carbs down at the moment but I managed to make this between cleaning the kitchen, feeding my baby dinner, putting her to bed and setting the table! My nearly 9 year old stepson added extra gravy, munched it all down!

  19. Definitely a winner in this house. If using white potato I would only mix for 15 secs not 20. Still tastes great though!
