Course: Dinner
Prep Time: 5 minutes
Cook Time: 38 minutes
Total Time: 43 minutes
Servings: 4 -6

Ingredients

Seasoning Ingredients

  • 1 clove garlic - peeled
  • 20 g oil of choice
  • 1 Tbsp sweet/mild paprika
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1 pinch pepper and cayenne

Mash Ingredients

  • 600 g sweet potato - peeled, cut into small cubes
  • 30 g butter - optional
  • 30 g cream - optional
  • 1/4 tsp salt

Remaining Ingredients

  • 800 g liquid chicken stock - or 1 tbsp stock concentrate + 800 g water
  • 500-700 g chicken breast - sliced in half length ways
  • 400 g vegetables of choice
  • 2 Tbsp corn flour or tapioca flour - dissolved in 1/4 cup of water

Instructions

  • Add garlic to mixer bowl, chop for 2 sec/speed 9/MC on. Scrape bowl down.
  • Add remaining seasoning ingredients and mix for 5 sec/speed 3/MC on. Set aside.
  • Without washing the bowl, add the liquid stock and set the timer for 12 min/100°C or 212°F/speed 3/MC on.
  • While the stock is heating up, prepare your sweet potato and place it into the simmering basket. Prepare your chicken by coating well in the reserved seasoning paste and placing in the deep steaming tray. Prepare your veggies and place into the flat steaming tray.
  • Put the simmering basket with the sweet potato into the mixer bowl and set the timer for 20 mins/steaming temp/speed 4. Put your steaming trays with the chicken and vegetables in place. You may need to turn your chicken over half way through. If you are feeling organised, clean your kitchen!
  • When the chicken and vegetables are cooked, set aside in a thermal server to keep warm. Set the sweet potato to the side.
  • Retain 500 g or 17.6 oz of the liquid stock in the bowl and add your corn flour mixture, cook for 5 min/100°C or 212°F/speed 2/MC off.
  • When the gravy has thickened to your liking and seasoned to your tastes, remove it to a gravy boat to keep warm and without washing the bowl, put your mash ingredients, including the reserved sweet potato, into the bowl and blend for 10 sec/speed 5/MC on.
  • Insert butterfly and whip for 20 sec/speed 3/MC on.
  • Serve.

Notes

You don't have to turn the sweet potato into mash if you don't want to.
This wont work as mash with white potato, but you can serve white potato as chunks with butter and salt on top.
If you are using soft vegetables, like broccoli or zucchini, add it in the last 10 minutes of cooking time - they dont need the full 20.

  1. Another great Skinnymixers recipe. This one is great for an after work meal for the whole family as it is so quick and easy. And OMG the mash is divine!!

  2. Nic,

This is truly an amazing and simple dish, the whole family enjoyed it and my son who doesn’t like gravy or sweet potato still enjoyed the chicken with other vegetables on its own. My daughter who has chronic fatigue devoured her meal which was great to see, as usually she struggles at times to eat a full meal because she tires easily. Def making it again. Thank You 😍

  3. This was my first attempt at varoma cooking and was wonderful 🙂

I padded out the sweet potato with cauliflower to make the mash and was wonderful too.

Just reading the recipe I thought it might be a bit bland, but was fantastic.

Thanks for a great recipe… again.

  4. Delicious meal, my family loved it all, so tasty. The gravy and mash were amazing!
    Thankyou for sharing your recipes.

  5. Delicious! Enjoyed by the whole family and so easy and affordable The mash is definitely the standout feature of this dish. I love sweet potato mash but this is at a whole new level.
My tip would be to dissolve the flour in hot water (or hot stock) so it ‘cooks’ a bit first and then put it at the Veroma temp instead. This makes a thicker gravy.

  6. Yuuuuuuuuum! Such a great meal to throw together with staples from the fridge and pantry. And the mash. Holy smokes, if I could have licked my TM bowl I probably would have. So sweet and creamy. Beautiful meal that was a hit with the whole family. Thank you!

  7. I love an all-in-one dinner. This one has a great amount of flavour for such a simple recipe. My 1yo absolutely loves this meal. It’s great because I can pour the gravy on anything and he will just devour it all up 🙂
Thanks again Nik! Making my way through all your recipes, my go to recipes are filling up with skinnymixers!

  8. This appears on our weekly menu every week, quick easy and delish. I double the corn flour for a thicker gravy. Everyone from young and old love this dish.

  9. This is another fantastic dish. Perfect for throwing on after a long day at work. The gravy is a bit thinner than most but the flavour is amazing. The mash is beautiful.

  10. This was delicious!! Super quick and easy to make, chicken was perfectly cooked and the mash and gravy were to die for.

  11. Delicious!!! My whole family loves it, mash was Devine!!! Only wish I could fit in a bit more mash into the basket to feed the 5 of us 🙁

  12. Delicious!!! My whole family loves it, mash was Devine!!! Only wish I could fit in a bit more mash into the basket to feed the 5 of us

  13. Amazing! Simple, delicious and healthy! I love that it uses the varoma and I feel like I’m getting a meal that is value for money not only becuase it’s delicious but becuase I’m using my Thermomix to its full potential. I make meals for one and this was perfect for freezing and reheating. Will become a regular at home! Thanks Nic!

  14. Delicious! Cooked tonight for dinner, tasted fantastic, everyone loved it, will definitely be a regular in our house. Recipe was easy to follow, steps easy to do such a great meal!

  15. Im a student and a carer, so cheap quick meals are so important for me. This all in one dinner is great hot AND cold for left overs. Uni lunches made easy! I can shower and get ready for school while thermi is doing his thing, making succulent chicken.
Word of warning: don’t get over confident and use a lot of chicken! This will take longer to cook. I learnt that the first time.

  16. really easy and delicious, I cut my brocolli too small so maybe should’ve done for 5 minutes not 10. The mash … Well im not a mash person but it was amazing!!

  17. Delicious! So easy to make and our fussy 6yo boy ate everything! He is starting to get less and less fussy with every SkinnyMixer meal we make. Thanks again!

  18. Huge success! So easy to do and great taste with my daughter even asking for more which is unheard of normally lol. That sauce is yummy I kept dipping my finger in!!
