Course: Dinner
Prep Time: 5 minutes
Cook Time: 38 minutes
Total Time: 43 minutes
Servings: 4 -6

Ingredients

Seasoning Ingredients

  • 1 clove garlic - peeled
  • 20 g oil of choice
  • 1 Tbsp sweet/mild paprika
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1 pinch pepper and cayenne

Mash Ingredients

  • 600 g sweet potato - peeled, cut into small cubes
  • 30 g butter - optional
  • 30 g cream - optional
  • 1/4 tsp salt

Remaining Ingredients

  • 800 g liquid chicken stock - or 1 tbsp stock concentrate + 800 g water
  • 500-700 g chicken breast - sliced in half length ways
  • 400 g vegetables of choice
  • 2 Tbsp corn flour or tapioca flour - dissolved in 1/4 cup of water

Instructions

  • Add garlic to mixer bowl, chop for 2 sec/speed 9/MC on. Scrape bowl down.
  • Add remaining seasoning ingredients and mix for 5 sec/speed 3/MC on. Set aside.
  • Without washing the bowl, add the liquid stock and set the timer for 12 min/100°C or 212°F/speed 3/MC on.
  • While the stock is heating up, prepare your sweet potato and place it into the simmering basket. Prepare your chicken by coating well in the reserved seasoning paste and placing in the deep steaming tray. Prepare your veggies and place into the flat steaming tray.
  • Put the simmering basket with the sweet potato into the mixer bowl and set the timer for 20 mins/steaming temp/speed 4. Put your steaming trays with the chicken and vegetables in place. You may need to turn your chicken over half way through. If you are feeling organised, clean your kitchen!
  • When the chicken and vegetables are cooked, set aside in a thermal server to keep warm. Set the sweet potato to the side.
  • Retain 500 g or 17.6 oz of the liquid stock in the bowl and add your corn flour mixture, cook for 5 min/100°C or 212°F/speed 2/MC off.
  • When the gravy has thickened to your liking and seasoned to your tastes, remove it to a gravy boat to keep warm and without washing the bowl, put your mash ingredients, including the reserved sweet potato, into the bowl and blend for 10 sec/speed 5/MC on.
  • Insert butterfly and whip for 20 sec/speed 3/MC on.
  • Serve.

Notes

You don't have to turn the sweet potato into mash if you don't want to.
This wont work as mash with white potato, but you can serve white potato as chunks with butter and salt on top.
If you are using soft vegetables, like broccoli or zucchini, add it in the last 10 minutes of cooking time - they dont need the full 20.

  1. My kids scoffed this meal down.. It was super straight forward to make with a cranky newborn in a hugabub carrier, and two other hungry children snapping at my feet and with hubby away with Army, I needed a meal like this on the meal planner. Nutritious, hearty, simple and delicious. Thanks Nik!
Ps. Next to try is the all in one beef dinner!

  2. LOVED IT as did the whole family. Mstr 4 has declared it is favourite meal and can we have it again tomorrow night! Will definately become a weekly in our house.

  3. Mid-week meal winner! I love a recipe that utilises all the features of my thermie, and this is perfect example. A great way to use up leftover veggies from my weekly box too. Our favourite part was the mash – absolutely delish!

  4. Nearly 5yo nephew enjoyed all in one chicken. It was great to be able to feed him such a wholesome easy to prepare meal.

  5. OMG such a quick, easy and tasty meal. I do half with the seasoning & half without as I have fussy kids but they do like the gravy. Highly recommended to everyone.

  6. I am still in shock! My kids devoured this, not a whinge in sight. Made the mash with pumpkin, it was delicious, seriously, my kids just ate the best meal they have in long time. Thank you so much Nik xx

  7. Yum!!! So easy and delicious. My husband hates sweet potato so I used white and made into mash fine! Cream and butter with a dash of salt. Speed 3 ten seconds 🙂

  8. Yum yum yum! This is he first skinny mixers recipe I have tried, despite being a member of the skinny mixers group on Facebook for quite some time. So delicious. This will now be a regular dinner meal for us. The sweet potato mash is to die for.

  9. We had this tonight and it was absolutely delicious. Thanks for the tips about the softer veges, they were cooked beautifully. What a lovely flavour in the sweet potato mash. Thank you!

  10. Yum. Yum, yum, yum, yum ,yum. This was delicious. I halved the recipe as I live alone so had half for dinner and half for lunch the next day. I am also diary free so just put a little cashew milk in the mash. It was perfect.

  11. Thank you! Family of 4 ageing, 2x thirty something, 4yrs and 2 yrs really enjoyed this all in one meal. And I really enjoyed making it. So straightforward. Thanks again, Nik for your incredible offering.

  12. Great recipe 🙂 Super easy family dinner. We are a paleo family so I ended up transferring the gravy to a wide pan over high heat to reduce it quicker, Next time I will reduce the water and add extra veg to throw in to thicken the gravy to keep it quick. Massive hit with master 3 who happily ate the leftovers for 2 days.

  13. Oh yum! This chicken was probably the best chicken I’ve had cooked in the thermo. Moist and tender!
I made it without the mash as I am watching carbs, but I think I’ll have to give it a go based on all the comments!!
    Another amazing Nik dish 🙂
