Risoni was an ingredient I grew up eating a lot of on the farm, but usually in the form my Dad’s now famous Lamb Risoni. I wanted to take the idea of a risotto, and use risoni so that it was lighter. This Chicken and Vegetable Risoni is perfect for those nights where you are looking for something quick and easy.
Feel free to use whatever vegetables you have in the fridge and is fantastic to stir through some leftover roast chicken.
