The Crustless Ham, Tomato & Spinach Quiche in Dinners 3 is officially the quiche to make for people who don’t like quiche! IF you have any leftovers it is perfect for a filling, high protein breakfast or lunch.
My mum would always make her famous crustless quiche to feed our huge family with whatever leftover veggies she had in the fridge at the end of the week. I wanted to try and create a healthier version of what I grew up with, and this recipe is perfectly nostalgic for me without the calories.
I’m not sure what it is about this Crustless Quiche, but I honestly could not stop eating it when I made it!
It is SOOO good.
This is a super easy recipe that you can mix and match your favourite toppings with. I’ve made it with bacon, capsicum and some spring onion too.
What you will need:
- Toppings – Ham, tomato, baby spinach
- Eggs
- Nutritional Yeast Flakes – you can purchase this from the health food section of the supermarket or the health food store. They give you the cheesy flavour and some extra vitamins!
- Stock concentrate – I like to you chicken stock concentrate for extra flavour, although vegetable stock concentrate will work too.
- Onion powder
- Garlic powder
- Plain flour
- Baking powder
- Milk of choice
- Cheddar cheese – use your favourite! There are no rules for cheese.
- Olive oil
- salt & pepper
