Creating a cooked mayonnaise recipe has been high on my list for many years to give a delicious, healthy condiment to those who are uncomfortable eating raw egg.
It is important to use a mild flavoured oil so it doesn’t have an overpowering taste. If you have ever had a strong tasting mayonnaise, it will always come down to the oil used. I like to use the refined avocado oil from Costco – it isn’t green!
Other’s may prefer to use rice bran oil, as it has very little taste but I personally prefer a light tasting olive oil or avocado oil.
Store in an airtight container in the fridge for up to 7 days.
Ingredients
- light tasting olive oil or refined avocado oil
- white wine vinegar or apple cider vinegar
- egg
- Dijon mustard
