Skinnymixer’s Texas Chili features in the Thermomix cookbook The Healthy Mix VI Cookbook.

We couldn’t resist getting Grant Neal to put his Texas Chili in the cookbook. It’s a cracker and opens the never ending debate on beans or no beans in chili?
PS. it’s no beans in true Texas Style Chili and yes that is Chili with 1 L in it!

THMVI: Texas Chili

There is one thing I know for certain about Texans, and that is that they take their chilli beef very seriously. A true Texas chili shouldn’t contain beans and it should blow your socks off with a good punch of heat. Some will argue it shouldn't have tomatoes either, but I think if you sit in this camp you will forgive me when you taste this!

Ingredients

  • garlic
  • brown onion
  • red chillies
  • tin diced tomatoes
  • tomato paste
  • beef stock concentrate
  • smoked paprika
  • chipotle powder
  • dried oregano
  • cornflour
  • dried bay leaves
  • coarse grind beef mince - (ideally an 80:20% ratio from the butcher)

Notes

Tip: If you use a leaner mince, you may need to add mince to the mixer bowl with the sauce after cooking and mix for 3-4 sec/speed 3/reverse/MC on to break up the chunks.
