My most favourite freezer meal in the world… Macaroni Cheese with a Twist (Macaroni Cheese Thermomix recipe with 4 different hidden vege!). 

This healthy kids Thermomix recipe is so incredibly easy to make and makes A LOT. I like to make this for dinner and then freeze any leftovers in portions for easy kids dinners.

Over the years this Macaroni Cheese Thermomix recipe has saved the sanity of so many Skinnymixers parents, who needed to try and get their children to eat more vegetables.

This Macaroni Cheese Thermomix recipe is a fantastic base recipe, that you can easily adapt to your family’s taste. Some prefer to swap the ham for crispy bacon or tinned tuna or even crispy chorizo… drool!

Whichever way you decide to go, one of the best tips when making this recipe is to cut your vegetables small and really make sure it is cooked well before blitzing. This will avoid any strange texture from slightly undercooked vegetables.

Macaroni Cheese with a Twist

Ingredients

  • 100 g cheddar cheese - 2 cm cubed
  • 60 g parmesan cheese - 2 cm cubed
  • 100 g sweet potato - peeled, 1 cm cubed
  • 100 g carrot - peeled, 1 cm cubed
  • 100 g pumpkin - peeled, 1 cm cubed
  • 1 zucchini - roughly chopped (peeled if you don't want your children to spot the microscopic green specks)
  • 300 g macaroni
  • 500 g milk
  • 50 g spelt or plain flour
  • 40 g butter - 1 cm cubed
  • 200 g ham - diced
  • 1 tsp dijon mustard
  • 1/2 tsp mild paprika powder
  • 1 Tbsp chicken stock concentrate
  • 1 pinch freshly cracked black pepper

Instructions

  • Add cheeses into mixer bowl, mill for 10 sec/speed 9/MC on. Set aside.
  • Place 1,200 g or 42.3 oz water into mixer bowl, boil for 10 min/steaming temp/speed 1/MC on.
  • While the water is boiling, prepare your vegetables making sure they are cut very small and put into the large steaming tray.
  • After 10 mins, add your macaroni to the boiling water, and put your large steaming tray in place.
  • Cook for 10 min/steaming temp/speed 1/reverse.
  • Drain macaroni and put into a large thermal pot to keep warm.
  • Put your steamed vegetables into the mixer bowl with 100 g of the milk, purée for 30 sec/speed 8/MC on or until smooth.
  • Stir puréed vegetables through macaroni.
  • Put flour, remaining milk & butter into mixer bowl, cook for 6 min/90°C or 195°F/speed 2/MC on. While this is cooking you may like to pan fry your ham (or bacon if preferred).
  • Add ham, reserved cheeses, mustard, paprika, stock concentrate and pepper to mixer bowl. Cook for 2 min/90°C or 195°F/speed 2/reverse/MC on.
  • Pour sauce over maraconi and stir through. I highly recommend you give it a taste at this point, and add a pinch or two of salt depending on your preference.

Notes

This makes a large amount of food, at least 8 large serves. It freezes and defrosts well.
This was adapted from the Macaroni Cheese recipe in the toddler cookbook, for added vegetables and flavour 🙂
Bellini Users
Use your sharp blade for step 1 and then swap to your blunt blade for the rest of the recipe.
At step 2 use ST temp if using an Intelli and 130°C or 270°F if using a Supercook.
At step 3 use ST temp and speed 3 if using an Intelli, popping a tea towel over the steaming attachment and 130°C or 270°F and speed 4 if using a Supercook. Please note that you may need to cook the vegetables for a little longer if using an Intelli.
At step 4 use ST temp if using an Intelli and 120°C or 250°F if using a Supercook.
Please use speed 1 so that you don't chop up the pasta.
At step 9 use 100°C or 212°F.
At step 10 use 90°C or 195°F.

  2. This made an enormous amount of sauce. I didn’t add all the cheese sauce to the mac and veg is it would have been far too much liquid. Has anyone else just left the veg mix in the bowl and then added the cheese sauce ingredients and continued. Then you would be able to pour as much sauce as you like on your macaroni?

    1. Yes I make the sauce as per the recipe, but instead of pureeing the vegetables when they’re done, I set them aside and make the white sauce. Then once I’ve done the sauce I add the before and puree. Hopefully that makes sense! Tastes great.

    1. Just steam the vegies and cook the pasta as you normally would. Make the sauce on the stove, stirring continuously. Use a blender to puree the vegies.

  3. Every time I freeze pasta, it turns mushy upon reheating, so I dont freeze it now. Is this one actually OK if frozen?

        Bloody delish recipe! I used GF macaroni and would probably reduce cooking time of the pasta by couple mins next time. Was ok for eating now but will def not freeze well this soft. Otherwise perfect recipe. Max flavour.

  6. Made heaps if sticking to serving sizes, I rinsed pasta before adding vegetable puree (which separated pasta) my kids found it too cheesy so next time might scale back the amount of cheddar used. Otherwise great and will cook again.

    Very tasty! Made for the first time and used carrot/sweet potato/carrot as veggies with bacon. I only had shell pasta which didn’t cook very well in the TM5, so would recommend sticking to macaroni or similar.

    I adore this recipe, I converted it to not use a thermo mix by just blending the veggies separately, cocking the Macaroni, cooking the cheese sauce then combining it all together.

    I also upped the veggies and pasta to avoid having to weigh… I use one large zucchini, half a butternut pumpkin, 2 large seeet potato (or 3-4 small ones), 3 carrots, I upped the ham to 400gms and use two big handfuls of cheese!

    It is soooooo delicious!

  15. Just wanted to ask has anyone made this with almond meal instead of the flour? I already use lentil pastas instead of wheat pasta, but just wondered about the flour. Didn’t want to waste the ingredients making it to have it not turn out. Tia

    1. Did you try this? I am not sure how pulse pastas will go in the thermi? I have not had success with them in the past! any tips?

  16. Does this really do 8 serves for people?
    I recall having HEAPS last time I cooked it. I’m making it to send to a friend who has just had a baby (4 serves) and keeping some for my family 2 adults and a 5 & 2yo. I’ve cooked extra pasta and still don’t feel like it’s enough..
    Hubby bought HUGE Chinese food containers so maybe I’m sending them too much but I don’t want to underfeed them.

    1. I use Biocheese for the cheese (vegan cheese), rice milk and nutalex for the butter. It tastes amazing! There is an alternative version that’s dairy free too.

    Was a massive hit in our house.
    Instead of adding ham, whilst the white sauce was cooking I cooked some bacon and chicken breast in a pan and threw it all together.

  20. I tried this due to the rave reviews and agree, if you want to get hidden veg into your kids, this is good. I was after a more “mature” version to serve with an American BBQ themed meal so if that is what you are after this version is not it. This is more an alternative to easymac or similar, not an adult mac and cheese IMO.

  28. Just made this for my 10yr old twin boys. They don’t normally like mac and cheese because it’s too creamy, but after I told them it had carrot, pumpkin, Brussel sprouts and cauliflower (veggie loving boys) they devoured a big bowl each for lunch and declared it was the best mac and cheese ever. I found I could taste the flour a little too much so next time I will cook it off with the butter before adding the milk. Other than that it was a massive win. Thanks so much!

  31. Have made this before but so long ago and my 2 yr old didn’t like it. He’s now 4 and eats much better. Trying it with the him again tonight. Question: after 10 mins steaming veges, should they be really soft or still a little hard? Mine are quite hard still. They are 1cm size chopped as per recipe. Couldn’t cook the pasta any longer so it was a little annoying having to boil water again in TM to continue steaming. Prob should save the pasta water next time.

    1. I ended up steaming veg for another 5 minutes until quite soft. The purée was perfect and end result sooooo much better than the first time I tried it. So good both my kids (4 and 1) gobbled it without question – yippee!! And as I type this I may have even eaten a bowl myself 😉 amazing recipe! So glad I gave it another crack!

  33. Well that was definitely a winner in our household tonight! Kids loved it, hubby loved it and I loved it. Easy to make and flavourful.   49. Today we had leftover Mac and Cheese and instead of freezing it or putting it into lunchboxes, I crumbed it and baked it in the oven to make yummy Mac and Cheese bites. I am never eating mac and cheese any other way!

    Put your leftover mac and cheese in the fridge and let it go very cold and ‘gluggy’. Then scoop out bite size (or any size you like) mac and cheese, coat in flour, roll in an egg wash and then coat with crumbs. Bake in a very hot oven (I had it on 250 – turning over once) and once golden, enjoy dipped in your favourite sauce (mine was sweet chilli).

    Try and eat just one!!!

  52. Sadly my 4 children did not like this, and asked me not to make it again. They actually like most veggies so that was not the problem. I might try it again with less veg and more cheese, and then work our way up to this version.

  55. I missed the step to remove the puréed Veges before adding the flour – I continued on cooking the Veges again with the milk etc and it still worked perfectly.
    My fussy five year old gave it the thumbs up and ate two bowls full. I’d say this and Nike butter chicken are her favourite meals.

  58. Fantastic way to sneak veggies into a snacky meal! I found it a bit thick/sticky when I didn’t have enough zucchini but now that I’ve had the experience I’d just ensure there’s something in there for a bit of moisture. Flavours are amazing and you’d never pick the veggies if you weren’t told. Reheats well too!

  60. I made this one tonight after hearing so many rave reviews about it… I was not disappointed, it definitely lived up to all the hype! It was for my 5 year old son who inhaled 2 huge bowls full! I was able to put 4 serves away in the freezer for another day as well as enough for 2 serves in the fridge for tomorrow nights dinner. I also had a small bowl myself while I was waiting for my pork belly with caramelised Apple sauce to cook hehe. So easy & quick & tasty, this will definitely be on the menu again!

  61. I made this again last night because it freezes so well and my 2 year old daughter loves this meal. Happy to say she polished off a bowl and a half. Not bad a for kid who usually comes home from day care and doesn’t really want dinner! I used the full 500g bag of macaroni (left the rest of the recipe and instructions as is) and got 12 large (for a kid…maybe small for a hungry adult) sized portions out of it. Great recipe! Looking forward to trying many more from this site. So far they have all been a success.

  62. Delicious. My fussy 3 year old loved it. I added 50g cauliflower florets to the veggie steam mixture and as I used gluten free pasta I cooked that separately on stove top then just mixed in about 1/2 sauce with the pasta. I have enough sauce to freeze in batches too for some quick meals for kids.

Nik, my 18 yo son is moving into a flat next year as a student and has an idea he will minimise is costs as much as possible (my concern is he wont get the nutrition) I said i was probably going to have a bag of goodies for him to take home when he comes home on the weekend.   64. I don’t know why I didn’t make this earlier! So much yum packed into one bowl. It has been a great meal for getting little miss 8mths to venture beyond purées, everything else that requires a little chewing (apart from fruit) has been rejected but this has gone down a treat.
    I’ve been cooking chicken in the basket while the water is heating & the macaroni is cooking and having shredded chicken instead of ham because that’s what I had on hand.
    So easy and so delicious!

  70. This recipe is genius! My kids (3,7) loved it and ate massive serves. I made it with gluten free pasta and it worked well. I froze some and it was bit mushy defrosted but still tasted amazing. I made it and I still couldn’t believe how cheesy it was with so little cheese. This is a staple in my house now!

  73. The first time I made this, it was devoured by the three of us (me, hubby and small child). Second time, small child didn’t enjoy it (I blame the picky 3’s) but nevertheless, I ate my share and then some. I used gluten free pasta.   81. Always a great ‘treat’ to whip up for the kids. So simple and easy, and they always inhale it. Tonight I used leftover pumpkin soup (off the TM5 chip that they weren’t keen on) instead of the listed vege, and it tasteed magnificent!

  82. Made gluten free by replacing plain flour with equal amount of cornflour, and cooked gluten free pasta separately. Super yummy and awesome having all those veggies in there but still tasting like mac and cheese! Instead of ham, I fried bacon and pepperoni pieces (so much for veggies, haha). Delicious! I forgot to halve the recipe and ended up with way too much for little old me, so will try that next time. On the plus side, the freezer’s full. 🙂 Thanks!

    Have cooked without pumpkin once as I completely forgot to put it in and it was still great!

  87. This was delicious! My teenager hates nearly all vegetables so I wasn’t sure what she would think, well she loved it and even wants it in her lunch box tomorrow! I didn’t have any pumpkin so used cauliflower instead.

  95. Freezes and defrosts really well. I like to use smaller portions and use this as a side dish (instead of packet Alfredo/ rice etc). Will definitely make this for my son when he’s old enough to eat solids.

  96. Yum, how nice is this!! The kids loved it, as did mum and dad as we stole some whilst dishing it up for the kids.

    I had one hiccup… my veges weren’t soft enough after 10 minutes of steaming, but unfortunately I threw the boiling water out when I drained the pasta, so had to refill the TMX with water and wait for it to get to steaming temp again, which was a pain. Perhaps I didn’t chop my carrots small enough.

    Anyway, it was delicious. There are 3 dinners (each) frozen for the kids and a bit of leftover cheese sauce in the fridge. I’ll think of something yummy to have that with tomorrow.

    1. To save time instead of bringing the water to boiling point in the tmx I just boil the jug & then poor it in to the right weight amount required.

  98. Amazing!!!! Total crowd pleaser in our house. The fussy eater children loved it so much. I’ll never, EVER, tell them how many veggies are in it! We did a grown up version with the left overs and had peri peri shredded chicken in it to bulk it up, was awesome. Think this meal will be a staple in our house now.

  126. Just made this for an ‘occasionally fussy’ 12yo son and his friend (who struggles with vegies) and it was a hit. I didn’t get rave reviews but wasn’t expecting that with a friend over! LOL I used almond milk and gluten free flour (Orgran) and the sauce was great. I also used gluten free pasta which I would probably do on stove next time as it needed more water. It wasn’t as salty as I thought it might be but I also used ‘pizza blend’ cheese because that’s all I had so maybe with the tasty/parmesan combo that would be different. I also fried up some pieces of bacon until crispy to have over it and it was delish! Thank you, this is going to be on our treat menu 🙂

  135. Holy moly sooo much sauce!!! Was way too much sauce-pasta ratio for my kids so I cooked an extra 500g pasta & added it in to suit their taste. Not that the bothers me cause they WOLFED it down & I now have 6 dinners for them in the freezer ready to go for when I’m feeling lazy 🙂 this sauce is the bomb Nik, am going to make it for me & hubby one night & add the bacon & some chicken.
