Gnudi (NYOO-dee) totally won me over the first time I made them in Florence — all the cheesy, spinachy goodness without the pasta jacket.

They’re soft little pillows that get bathed in buttery sage and lemon, and honestly, they’re way easier (and cuter) than making ravioli from scratch.
