The Chicken Shawarma in SkinnyMediterranean is one of my all-time favourite savoury recipes. Tender chicken thighs marinated in yoghurt, lemon, garlic and Middle Eastern spices — finished with a creamy garlic-tahini sauce. It’s a cookbook-exclusive recipe.

This recipe is  wonderfully flexible. Serve it warm in Pita Bread Pockets or flatbreads, stack it on salad bowls, use it in wraps or sandwiches, or offer it as part of a mezze spread. The marinated chicken holds up well for leftovers, too — it tastes great the next day (if not better?!).

If you aren’t a lover of tahini, I recommend serving it with the Garlic Yoghurt Sauce or Labneh in the book.

Do I need a Thermomix® to make this?
No. The recipe includes both Thermomix® and traditional stovetop methods.

Can I marinate longer than 1 hour?
Yes — marinating overnight can deepen the flavour, just don’t go much past 24 hours or the acidity might start to affect texture.

Will the chicken dry out when reheated?
Chicken thigh will reheat beautifully.

Is this dish suitable for meal prep?
Absolutely — portion the chicken separately from salad or bread, and dress just before serving to maintain freshness and texture.
