Creamy, rich, slightly sweet with just the right amount of chilli, this easy 20-minute dinner is one you’ll want on repeat. Gochujang adds a savoury depth and warmth rather than an overpowering heat, but don’t worry if you don’t like spicy – it’s very easy to adjust.

Serve this easy dinner with some steamed rice, cauliflower rice and your favourite vegetables. Garnish with spring onion, sesame seeds and fried shallot.

What ingredients you will need

  • Garlic – fresh garlic forms the flavour base of the sauce.
  • Fresh ginger – adds warmth and freshness.
  • Butter – gives the sauce its rich, buttery flavour. Use dairy-free butter if required.
  • Tomato paste – adds richness, colour and a slightly sweet tomato flavour.
  • Gochujang paste – a Korean fermented chilli paste that adds savoury, sweet and spicy flavour. Choose a gluten-free gochujang if required. See below for tips on different heat levels.
  • Ground coriander – trust me, it doesn’t taste the same as fresh coriander (if you dislike coriander!)
  • Ground cumin 
  • Smoked paprika 
  • Cracked black pepper 
  • Chicken thigh – stays tender and juicy while cooking and works particularly well with the creamy gochujang sauce.
  • Chicken Stock Concentrate – We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock. 
  • Honey – balances the chilli and savoury flavours of the gochujang.
  • Cream – creates the creamy sauce. Use your preferred dairy or dairy-free cream.
  • Cornflour – mixed with water to thicken the sauce. Or use xanthan gum sprinkled in.

 

 

What is Gochujang Paste?

Gochujang is a Korean fermented chilli paste with a thick consistency and a savoury, slightly sweet and spicy flavour. It’s one of the key ingredients in Korean cooking and gives this Buttery Gochujang Chicken its signature flavour and colour.

Is Gochujang Spicy?

Yes, but the heat level can vary quite a bit between brands and varieties. Korean gochujang is often labelled with a heat level from mild through to very hot, so check the packaging when buying.

If you’re cooking for kids or prefer less heat, look for a mild gochujang. You can also reduce the amount used in the recipe to suit your taste. If you love spicy food, choose a hotter variety or add extra gochujang.

Keep in mind that gochujang isn’t just about chilli. It also adds sweetness, umami and that distinctive fermented flavour, so reducing it will slightly change the overall flavour of the sauce.

Where Can I Buy Gochujang?

Gochujang paste is becoming much easier to find in Australia. Look for it in the Asian or international foods aisle at major supermarkets, as well as Asian and Korean grocery stores. You can also buy it online.

The Gochujang Paste found in Coles is quite mild in flavour but isn’t gluten-free. The Gochujang Paste found in Woolworths is much hotter but is gluten-free

Gochujang is traditionally sold in a red tub, but you’ll also find it in jars, bottles and squeeze packs depending on the brand.

Gluten-free tip: Not all gochujang is gluten-free, so always check the ingredients and allergen information if you need a gluten-free option.

Yes, you can adapt this recipe! Here are the variations included with this Skinnymixers recipe.

Dairy Free

We love using Flora Plant Based Butter and Cream. Dairy-free cream of choice works though. You can also replace the butter with olive oil.

Gluten Free

Check your gochujang is gluten-free. The Gochujang from Woolworths is gluten-free. See our Tips for Cooking Gluten-Free Asian Food.

Low Carb

Use compliant sweetener and replace cornflour mixture with xanthan gum. 

Lower Calorie

Includes how to cook this recipe with chicken breast to reduce calories. 

Paleo

Use the Gochujang paste recipe from here. Replace cornflour with xanthan gum. Replace butter with ghee or olive oil.

Vegetarian

Use vegetable stock concentrate and replace chicken with tofu.

Low Fodmap

Omit garlic and replace half the butter with garlic infused olive oil. Replace honey with maple syrup. Replace gochujang with half sriracha and half tomato sauce (or Sambal) and add ¼ tsp miso paste. Use compliant stock concentrate and lactose-free cream.

Is this recipe spicy?
If you use a spicy gochujang it can have a bit of a kick. Please feel free to adjust to your own family’s taste. 

Can I leave out the gochujang paste as I don’t like spicy food?
Not really, it carries a big part of the flavour profile for this recipe. There are mild gochujang pastes available. Why not try a little and adjust the amount you use in the recipe.
