The pork belly is cooked until tender before the heat is cranked up to crisp the crackling, then it’s tossed through a sweet, salty and tangy Vietnamese-inspired coconut caramel.

Choosing Your Pork Belly
Look for a piece of pork belly with the skin attached so you can get those crispy little pieces of crackling on top.
Cut it into fairly even 4 cm or 1.6 inch cubes so the pieces cook at a similar rate.
Give the Pork Plenty of Space
For crispy pork belly, airflow is your friend.
Arrange the pieces in a single layer with the skin facing up rather than overcrowding or stacking them.
If your air fryer is smaller, you’re better off cooking in batches than squeezing everything in.
Getting Crispy Crackling
The pork belly is cooked in two stages.
First, we cook it at a lower temperature to cook the pork through and begin rendering the fat.
Then we turn up the heat to 200°C / 390°F to get that crackling beautifully crisp.
If you’re using the oven, finish the pork under a hot grill with the skin facing up. Watch it closely because crackling can go from golden to burnt very quickly!
How Do I Know When the Coconut Caramel is Ready?
The sauce should reduce into a glossy caramel that’s thick enough to coat the pork, rather than being thin and watery.
For the conventional method, look for a sauce that coats the back of a spoon.
Remember that it will continue to thicken slightly as it cools.
How to Serve Pork Belly Bites
These are rich, so a little freshness alongside them works beautifully.

Use compliant sugar.
PALEO
Use compliant sauces and coconut sugar and replace the rice wine vinegar as specified in SkinnyAsia 2.
LOW FODMAP
Omit the garlic powder and double the ginger powder.
HALVED / DOUBLED
If halving, keep the sauce quantity the same. If doubling, the coconut caramel will require a little longer to reduce. Follow the instructions in the book and use the thick, glossy consistency as your guide.

Why isn’t my pork belly crackling crispy?
Make sure the pork is arranged skin-side up in a single layer with enough room for hot air to circulate. The final high-temperature cooking stage is what crisps the skin, so give it a little longer if required while watching closely to prevent burning.
Can I make the pork belly bites ahead?
You can prepare the coconut caramel ahead, but for the best texture, cook and crisp the pork belly close to serving. Reheat the caramel separately and only toss the two together immediately before serving.
