Skinnymixer’s Crispy Noodle Wombok Salad features in the Sides of the cookbook SkinnyAsia 2.

Crunchy wombok salad is an Aussie BBQ favourite, and our SkinnyAsia 2 version is ALL about the crunch.

Shaved wombok, spring onion and toasted almonds are tossed through a sweet and tangy sesame dressing, then finished with loads of crispy noodles.

You can use ready-made crispy fried noodles or follow our method for turning fresh Singapore noodles into crispy noodles at home.

What ingredients you will need

  • honey
  • light soy sauce
  • neutral oil
  • rice wine vinegar
  • roasted sesame oil
  • slivered almonds
  • fresh Singapore noodles or Crispy Fried Noodles (gluten-free if required)
  • spring onion
  • wombok

How to Make Crispy Noodles

If you’re using ready-made crispy fried noodles, there’s nothing to do. Just keep them sealed until you’re ready to serve.

If using fresh Singapore noodles, toss them with a small amount of oil and cook until golden and crispy.

Our favourite method is the air fryer at 190°C or 375°F, shaking every few minutes so they crisp evenly.

Depending on the noodles and your air fryer, this can take around 7–15 minutes, so keep an eye on them towards the end.

You can also dry-fry them in a non-stick frying pan or deep-fry them in a wok.

Allow the noodles to cool before adding them to your salad.

Maximum Crunch!

The number one rule for this salad is simple:

Don’t add the crispy noodles until you’re ready to serve.

Once they hit the dressing they’ll gradually soften, so keep your noodles separate and toss them through at the very last minute.

For an extra-crunchy salad, we’d also recommend adding the dressing close to serving.

Prep it Ahead

This is a great salad to prepare ahead for a BBQ.

You can:

  • Shave the wombok and slice the spring onion
  • Toast the almonds
  • Make the dressing
  • Crisp your noodles

Keep everything stored separately, then toss it all together just before everyone eats.

Toast Your Almonds

Don’t skip this little step!

Toasting the slivered almonds gives them extra crunch and brings out their flavour.

For a nut-free option, use toasted sunflower seeds instead.

Mix Up Your Salad

The simple wombok base makes this one really easy to customise.

Try adding:

  • Shredded carrot
  • Finely shredded purple cabbage

Both add even more colour and crunch without changing the overall style of the salad.

Try it alongside:

Dietary & Recipe Variations

GLUTEN FREE
Use gluten-free crispy fried noodles or suitable fresh gluten-free noodles, plus gluten-free versions of the dressing ingredients where required.

LOW CARB
Omit the noodles and double the slivered almonds.

SUPER SKINNY
Halve the oil and noodles.

PALEO
Omit the noodles and double the almonds. Replace rice wine vinegar with apple cider vinegar.

LOW FODMAP
Replace honey with maple syrup, use suitable gluten-free noodles and use only the green part of the spring onion.

HALVED / DOUBLED
This salad can easily be halved or doubled depending on how many people you’re feeding.
