Skinnymixer’s Kachumber Salad features in the Sides of the cookbook SkinnyAsia 2.
Sometimes a rich curry just needs something fresh and crunchy alongside it.
Kachumber is a simple Indian salad of cucumber, tomato and onion. Our version is tossed through a bright lemon dressing with fresh coriander, mint and cumin, with optional green chilli for a little kick.
Best of all, there’s no cooking required and it’s ready in around 15 minutes.

What is Kachumber?
Kachumber is a fresh Indian chopped salad commonly made with cucumber, tomato and onion.
It’s crisp, light and tangy, making it a great contrast to rich curries, grilled meats and spiced dishes.
There are plenty of variations, but the beauty of Kachumber is its simplicity.
What to Serve with Kachumber Salad
We’ve included Kachumber in SkinnyAsia 2 because it works beautifully alongside so many of the Indian recipes.
Try it with:
- Slow Cooked Rogan Josh
- Chicken Biryani Bake
- Roast Tandoori Chicken
- Dal Makhani
It’s particularly good alongside rich or creamy dishes because the fresh cucumber, tomato, herbs and lemon help balance the meal.
Dietary & Recipe Variations
LOW FODMAP
Replace the red onion with spring onion greens as specified in SkinnyAsia 2.
HALVED / DOUBLED
This recipe can easily be halved for a smaller meal or doubled when you’re feeding a crowd.
Storage
Store Kachumber in an airtight container in the fridge for up to 2 days.
For the best crunch, however, enjoy it within 1–2 hours of adding the dressing.
If you’re making it ahead, prepare the vegetables and dressing separately and toss together shortly before serving.
