What is Golden Coconut Rice?

Golden Coconut Rice is our flavour-packed take on coconut rice.

The basmati rice cooks with coconut milk, turmeric, stock and bay leaf, giving it a fragrant flavour and beautiful golden colour.

Once cooked, toasted cashews and coconut flakes can be folded through for extra flavour and texture, with fresh coriander added just before serving.

It’s a simple way to turn rice into a side dish worthy of being part of the main event.

What gives Golden Coconut Rice its colour?

The gorgeous golden colour comes from turmeric.

You only need a teaspoon to transform the rice, adding an earthy warmth as well as that signature golden colour.

Combined with coconut milk, it makes a fragrant rice that works particularly well alongside curries and other richly flavoured dishes.

What rice is best for coconut rice?

We use basmati rice for our Golden Coconut Rice.

Its long, slender grains and fragrant flavour work beautifully with coconut milk and spices. Rinsing the rice thoroughly before cooking removes excess surface starch and helps keep the finished rice fluffy rather than overly sticky.

Keep rinsing until the water runs relatively clear before cooking.

What can I serve with Golden Coconut Rice?

Can I make Golden Coconut Rice in the Thermomix?

Yes. The recipe includes both Thermomix/thermo cooker and conventional stovetop instructions.

For the Thermomix method, the rice can be cooked in the simmering basket. If you have a TM6 or TM7, you can also use Rice Cooker mode with the adjusted amount of water specified in the recipe.

When using Rice Cooker mode, don’t halve the recipe.

Can I make Golden Coconut Rice without nuts?

Absolutely.

The cashews are optional and can simply be left out for a nut-free Golden Coconut Rice.

You can also omit the coconut flakes if you prefer a simpler side dish. The coconut milk, turmeric and stock will still give the rice plenty of flavour.

Dietary variations

Golden Coconut Rice can easily be adapted to suit different dietary requirements.

Nut Free: Omit the cashews.

Low Carb/Paleo/Super Skinny: Replace the basmati rice with 400 g cauliflower rice

Vegetarian: Use a compliant vegetable stock concentrate.

Low FODMAP: Use a compliant stock concentrate.

Halved/Doubled: When halving in the Thermomix, halve the rice only. To double the recipe, use the conventional stovetop method.

FAQs

Can I use light coconut milk?

Yes. You can use full-fat or light coconut milk depending on your preference.

Full-fat coconut milk will give you a richer coconut flavour, while light coconut milk works well if you want to keep the rice a little lighter.

Can I make Golden Coconut Rice ahead of time?

Yes, but cooked rice needs to be handled carefully. Cool leftovers promptly and refrigerate in an airtight container for up to 2 days as directed in the recipe.

When reheating, make sure the rice is heated thoroughly until steaming hot and only reheat it once.
