Ingredients

  • 200 g raw cashew nuts
  • 100 g desiccated coconut - plus extra for rolling
  • 50 g coconut oil
  • 50 g organic maple syrup
  • 2 tsp vanilla bean paste - or extract
  • 100 g dark chocolate - roughly chopped

Instructions

  • Add all ingredients, except chocolate, to mixer bowl and blend for 15 sec/speed 8/MC on.
  • Use spatula to redistribute ingredients, and blend for another 15 sec/speed 8/MC on.
  • With damp hands, roll walnut sized balls. Tip: squeeze the mixture initially to compress, then roll. Ensure hands are kept damp. If your hands are hot, they will go oily but this will not impact the final product.
  • Put balls in the freezer for 20 min.
  • After 20 min, add dark chocolate to mixer bowl, mill for 10 sec/speed 9/MC on. Scrape bowl down. Melt for 3 min/50°C or 120°F/speed 2/MC on.
  • Pour chocolate into a bowl and extra desiccated coconut into a second bowl.
  • Coat the frozen bliss balls in chocolate, and then coconut one at a time.
  • Refrigerate for 30 min or until needed.

Notes

To make these into a quick slice, simply press into a slice tin and coat with chocolate then coconut.

  1. Sunflower seeds or pepitas usually sub in well for these sorts of recipes. I have not tried this particular recipe, but I have successfully used either or a mix of both seeds to avoid nuts in a range of protein/bliss balls.

  2. These look fab! If I want to premake these for a bday slice next week…would it be best if I make the mixture, push it into the slice tin and freeze for 20 mins, take it out and cut into bite sizes, then put back in the freezer til the morning of the party, then defrost the pieces slightly and roll in coconut, then serve? TIA! 😀

  3. So delicious can not recommend this recipe enough. Would love to make a nut free version for the kids school lunches, read some of you have used chickpeas would love to know how they taste in comparison to the originals if anybody has made both?

  4. I was scrolling through the comments to see if the roasted cashews DP bought would work, when the penny dropped: DS wanted these for school and our school is definitely nut free! So, hmm…maybe chickpeas or maybe I’ll find a more traditional one that looks like these for school, and keep these just for home.
    Side note: original question- salted cashews?

  5. Made theses with a can of chickpeas and some cashews as I didn’t have enough cashews on hand to make a full batch. You could make them with chickpeas instead of nuts for people allergic to nuts.

    1. Ive had some in the freezer that tasted fine after several weeks. Had to make a lot though for them to last that long! I am lazy and make it as a slice which is heaps easier and the servings can be any size you want.

    1. I made into a slice and everyone loved this I used 85% chocolate but will have to change this as I’m can have chocolate

  6. These are quite yummy and so easy if made as a slice and cut into small squares after freezing for 20 mins. Even ok for our tree nut free school as cashews are technically seeds. My kindy boy enjoys them.

    1. I would query this. Those kids who are allergic to cashews often have a more severe reaction than those allergic to peanuts. No school would ever classify a cashew a seed.

      1. All nuts are a seed from the plant but are classified as nuts peanuts are a legume yet classified as a nut.

      2. Agreed! Cashews kill me :/ well they try to anyway…. :/ I also know schools would be classifying cashews as nuts. Same as they classify peanuts (a legume) as a nut. I would leave them out of the lunchbox please. You don’t want to be the reason someone’s child is hospitalized or worse….

        1. They are not legumes, they are the seed of the cashew tree, and they grow on the outside of the fruit. They do not contain as much omega-6 as almonds or some other nuts.

    2. I agree with the other comment. Peanuts are not a it whereas cashews are. My daughter has an allergy to cashews and usually anyone with cashews has pistachios too (which she does) so I would definitely check with the school as this could be fatal for the kids involved if the school has this policy

        1. You could use Cacao butter instead of coconut oil, it use either or when I make this chocolate. So it’s a combination of raw cacao, honey and the oil OR butter. Hope this helps!

  10. These look great but my daughter is allergic to cashews and pistachios. Could someone please suggest how I could adapt the recipe to make them safe to have in our house? Would a direct sub of almonds work? Thanks.

  11. I absolutely love this recipe. I’ve made it for friends and everyone asks for the recipe. I have made it as a slice and also used silicone moulds (either chocolate moulds or silicone mini-muffin pans). I have also made it without the chocolate – such a delicious snack! I can’t get enough!

  12. Amazing. I made 6 batches for my family (mainly the hubby) over the Christmas period… About 10 days. They are so easy to make and you can secretly cut the sugar down a tiny bot if people are over indulging. The coconut is just fab!

  13. These are amazing. Made them a few times now, we had leftover activated cashews and macas so used both of them the second time making, couldn’t even tell the difference! Personal preference is to melt the chocolate in microwave rather than Thermo, just because rolling the balls in chocolate is easier without navigating blades, also found that we needed a lot more chocolate than the recipe stated – that might just be my love of chocolate though! :)))

    1. I found the same!! Thought I must have over choc dipped also! This will sound silly- but how long did you melt the chocolate for in the microwave? Did you have to do anything? I’m a massive ameture! 😊

    1. Depends how fiddly you want to be, you could put a bit of jam inside each ball when rolling them, so you bite into it and get a mouthful of jam. Otherwise someone said they made it as a slice, you could do that but put a thin layer of cashew mix, layer of jam, other layer of cashew mix, then chocolate and coconut on top! 🙂

    1. These are a weekly treat in our house, I substitute with sunflower and pepita seeds to make it daycare friendly for the kids, but keep it just as is (it’s perfect) for me and hubby!!

  22. I made this today using half blanched almonds and half raw cashews. They were oily whilst I rolled them but once set, they were fine. I used quirky cooking’s dairy free raw chocolate and after setting they were amazing! Hopefully I’ll have some left once the husband and daughter have got stuck into them so I have a “healthy” treat for when those sugar cravings kick in! Well done Nik, another awesome recipe!   23. These taste great, but I ended up with a pool of oil when I rolled them. Anyone else had that? It was like the coconut oil just ran straight out… and its not even that hot here today. I might try with less coconut oil next time.

    1. That happened to me too Caro. I think it might just be all the oils from the nuts. Once they are in the freezer though the oils all blend together.

    2. I reduced the oil a little tonight and they were a little crumbly. I decided to just squeeze the extra oil out next time.

  29. Just made these and they are awesome. Very easy. I’d heard they can be difficult to roll, but it was a cooler night, so no issues. I added extra 40g of Lindt 70% – so think I was a bit generous on the chocolate dipping. Now I just need to hide them! Also great as now I can take treats for vegan friends at work.

  30. Fantastic recipe! I made exactly as per recipe and had no trouble rolling into balls. My coconut oil was quite solid though so that might have helped.

  31. Soo delicious. I made it as a slice, i doubled the filling recipe to fill a regular sized slice tin, and the suggested quantity of chocolate to just provide a thin layer over the top. I added just a touch of coconut oil to the chocolate so it would spread easier and set nice and smooth. I found i only needed half the amount of maple syrup, but that is obviously personal preference. It was all gone within 48 hours with just my hubby and me ?

  37. These are so quick and easy. They taste amazing and so easy to add in other flavors for variations . We love them with coconut oil choc on the outside. Our favorite is adding cherries (from a jar) to make cherry ripe balls. So yummy and not naughty!

I really wasn’t excited about coating them all individually in chocolate.. and I used 90% dark chocolate that I really don’t like so every few minutes I’d accidentally lick my fingers and think “ooh gross” (expecting it to be yummy and full of sugar!)..   47. Yum! I’m using these as fat bombs. Used macadamias as didn’t have cashews. Made 30 small balls, some coated in choc and coconut, some in choc and sprinkles (for the little man), some plain (to reduce the carbs).

  54. These are awesome. So hard to roll but so worth it! Maybe my hands are too hot and my chocolate melted funny but I got there in the end! So delicious. I added some almonds too because I didn’t have enough cashews.

  55. Just put a batch in the freezer, went to get the chocolate out of the cupboard and it’s all gone. I have white chocolate and cacao powder, think it will work with a tbs of that mixed in? Maybe with a little coconut oil to thin it down?

  58. This recipe is a smashing success. I was quite surprised at how light and fluffy they were.
    After a bit of trouble I kept my chocolate in the tmx bowl as this kept it warmer and liquid for longer. Holding the bowl at an angle to pool the chocolate, I used a skewer to spin the truffle to coat before then placing in a bowl of coconut.
    These were a huge success with everyone at our Australia Day celebration. Thanks for another fantastic recipe xxx

  62. Made these balls yesterday and half have gone already. Made 2 changes tho; toasted the coconut and put a frozen raspberry in the middle of half the balls for those who like their lamingtons with jam 😉 Even my very fussy food critising hubby who nibbles at the other bliss balls i make, then puts them directly back in the fridge with a ‘yuck’ has given the thumbs up to these. And that is saying something!

  68. made these today and they are lovely. I’ve got gestational diabetes at the moment, so I substituted the maple syrup for sugar free maple syrup and added two natvia satchets (about 1tsp of natvia) to the mix instead of regular maple syrup. Still delish! And low on carbs and sugar so it works well for the GD.

    My only question is, I didn’t have 70% dark chocolate, only nestlè dark choc chips, when melted they are really thick, so I’ve got a very thick layer of chocolate on the outside of mine. Is 70% dark choc thinner??

    1. I think each chocolate is different, some contain more fat and also thickeners and emulsifiers which cause different results… You can thin it next time with some added cream or coconut cream before melting xx

  69. Delicious! Substituted macadamias for the cashews and coconut milk for the coconut oil because that was all I had in the cupboard. Master 3 wants them without the chocolate and I had to hurry up and get them in the fridge because vast quantities were being consumed. They will be awesome when I get the chocolate on the outside, thanks for sharing xx
