Chilli Con Carne from the Thermomix Cookbook ‘A Little Taste of Mexico’ would have to be one of the most popular recipes in the Skinnymixers community.

Although I got sick twice and suffered for a very long time after visiting Mexico, it was truly one of the highlights of my life.

I believe the recipes in A Little Taste of Mexico are a whole other level to my other ones, as I was taught about cooking authentic Mexican food in Oaxaca and Mexico City 😍😍

Chilli Con Carne is not a traditional Mexican recipe, but rather a very popular American influenced Tex-Mex dish which features tender, fall-apart beef and complex flavours. Great served on its own, with rice, vegetables, nachos or inside fresh tortillas.

Notes

This recipe has a 2 chilli rating but can easily be adapted to be milder. There are also variations in the book for Low Carb Healthy Fat and Super Skinny.

    Nailed it – love love loved it

    Had over brown rice and a little less heat for kids sake but still amazing

  2. Made this last night as per recipe. Only change was using thermi to shred the meat a bit at the end of cooking (before adding the beans). Definitely preferred the texture shredded than when I’ve left it diced before.

    Served with a mix of rice and cauli rice.

    Good flavour, would definitely remake.

  3. Chilli con carne is a staple in our house & this recipe is so flavourful. The chunks of beef as opposed to mince took it to the next level & this is the only way I’ll be cooking it from now on. I had to put the mc on to stop it splattering out the top of my thermie as it cooked & next time I’ll be using rump instead of gravy beef because it wasn’t as soft as the recipe suggested even though I cooked it longer. Definitely give it a go, it’s easy & delicious.

    1. Oh how I love this recipe! The recipe says to put the simmering basket on top to avoid splatter. So you cooked it for the 60 mins? The gravy beef needs to be well trimmed and starts to break down towards the end of the cook. I would recommend perhaps trying it cut a little smaller 🙂 I personally wouldn’t use rump for the long cook x

  7. Chilli con carne with red ‘cauliflower’ rice for dinner tonight… So very yummy.
    I omitted the cinnamon (I don’t like cinnamon).
    Even my 7 & 5 year olds went back for seconds…

  8. After making this version. Never going to make the mince begin again. It was fantastic. I’ve made out about for times now already. Though once I used chuck steak, don’t recommend that cut, by accident. Taste wad great but the meat was chewy. Stick to the recommended gravy beef and you can’t go wrong!

  10. My family’s favourite recipe from ALTOM. Simple recipe, full of flavour, easy to adapt to LCHF for me and served in tacos, wraps or as nachos for the kids. Budget friendly and versatile being able to use beef or mince. It’s on our meal plan rotation. 10/10

  15. Wow. So. Much. Flavour. We only added half the chilli powder as the toddler was supposed to eat it. That was fine as we use jalapeños.
    Used it on simple tacos… Soft tortillas, sour cream, cheese, avo and tomato. I didn’t have beef stock so used chicken. No chipotle powder so used smoked paprika.

  19. I grew up eating my mum’s version of this, this version is SO much better. Delicious, full of flavour and super easy. The compexity of flavours was amazing, this will be a regular meal from now on. Loved it!

  21. I made this tonight and it was delicious! Even my chilli con carne hating partner loved it! I added more water after 40 mins, cooked for the entire duration and served on a mix of brown rice and chia seeds. So easy and delicious, thanks Nik!

  22. WOW! used beef shin as we dont’ get “gravy beef” here in the UK – only used 500g of meat, upped the fluid volume after 45mins by just adding water – will be awesome with beef cheek as well – 7 generous portions!

  23. Delicious! I went back for seconds and all the family finished their meal including a fussy three year old and a one year old with allergies. Served it with the red rice and there are lots of leftovers. This meal will be going into our regular meal plan.

  26. Delicious meal that is flavour packed. I found it low maintenance to prepare as well which is handy with a toddler. The meat was extremely tender, I used gravy beef and cooked for the full 60 minutes. Will be a regular at our house.

  27. Love the smokiness of this recipe. It’s super delicious served over cauliflower rice and with a dollop of sour cream. Will be a keeper for my meal planner

  28. can this be cooked in the slow cooker? Would it need less liquid? Not 100% sure that gravy beef would be tender after just 60 mins

    1. I cooked it in the slow cooker last night! It was fabulous. Didn’t add any water at all. Just the dried stock.

  29. Yummo! Just finished dinner and it was a real winner! Tasted very authentic, great flavors. Tonight we had the chilli con carne in tacos and they were definitely the best I’ve had!!! I have a Tefal Cuisine Companion and the only adjustment I made was to replace the UltraBlade with the stirring tool after I’d chopped the onions and garlic. Lots left over, maybe we’ll have it on a baked potato tomorrow night! Thanks Nik!!!
