Guest Recipe: Kerry’s Low carb jalapeño & cheese cauliflower fritters

These delicious low carb patties are Kerry’s spicy version of the Low Carb Cauliflower and Haloumi Fritters

Ingredients

  • 80 g cheese - I used bit & pieces that I had in the fridge but you could use your favorite cheese
  • 500 g cauliflower florets
  • 2 cloves garlic
  • 40 g 2 plump jalapeño chillies - quartered
  • 40 g around 3 spring onions - cut into pieces
  • 50 g almond meal
  • 2 eggs

Instructions

  • Grate cheese for 8 sec/speed 9/MC on. Set aside.
  • Add cauliflower to bowl & process for 5 sec/speed 5/reverse/MC on.
  • Steam cauliflower in the microwave for 3 mins then cool until cool enough to touch
  • Squeeze out excess moisture and set aside
  • Add garlic to bowl chop for 8 sec/speed 9/MC on.
  • Add jalapeños & spring onions to bowl & chop for 3-5 sec/speed 4/MC on. (depending on how fine you may like it)
  • Add add back in the cooled cauliflower, almond meal, eggs & cheese & mix for 10 sec/speed 3/reverse/MC on to combine
  • Form into patties & fry in preferred choice of fat until a crust forms, then flip.

Notes

These would be great accompanied with a fried egg for breakfast.

Use your sharp blade for this recipe.
At step 1 make sure your cheese is in pieces no bigger than 1cm or 0.4 inch square and chop for longer if required.
At step 2 chop for longer if required.
At step 6 use speed 5 and chop for longer if required.

    Loved this. So tasty. Had to do some substitutions – used red onion instead of spring onions, and cayenne pepper with capsicums instead of the jalepenos. Also added a bit of fresh turmeric for some colour. Soooo good!

    1. Hi Taryn, yes these do require some patience! I definitely try not to touch them when they are in the pan until they are definitely ready to flip. Sarah

  2. Tasty! I made these today for the first time and they’re really tasty and quite simple to make.
    I never used 2 x jalapeño, instead I used 5 slices pickled jalapeño.
    I think it pays to be prepared with this recipe though. Pre-cook the cauliflower and it’ll be heaps quicker.
    Next time I’ll add more cheese and perhaps Skinnymixers ranch dressing!

  3. These turned out great. The first couple crashed and burned and did not stay in shape but that’s ok – more for the chief taster!
    The hotter the pan got I worked out that you don’t need any oil to cook them and they held their shape for me! Yay, winning! Brekkie tomorrow sorted. Thank you!

  4. These were just delicious! Another great recipe Kerry, I served with grated cheese, sour cream and a side salad.
