I anticipate this Wild Rice Salad featuring on quite a few Christmas tables this year!
A true celebration of textures with the nutty wild rice, pops of sweetness from the maple roasted sweet potato and crunch of the candied pecans I really adore this recipe in our new cookbook SkinnyAmerica.
This recipe was written for Wild Rice which can be difficult to purchase in Australia. You can purchase it from some health food shops or on Amazon (affiliate link).
You can also use Black Rice which is available from Woolworths – we DO NOT recommend using the pre-cooked black rice sachets as they have a weird rubbery texture and aren’t pleasant in this recipe (the only black rice at Coles).
You can also use brown rice. If you can source the wild rice or the black rice, they have a lovely nutty flavour and different texture to normal rice.
