Carrot in a blondie might sound a little unusual, but TRUST us on this one!

Inspired by the flavours of Indian carrot halwa, these blondies combine sweet, spiced carrot and fragrant cardamom with a fudgy blondie batter and white chocolate.

They’re rich, chewy and particularly good with a hot cup of chai.

What is Carrot Halwa?

Carrot halwa, also known as Gajar ka Halwa, is an Indian dessert made by slowly cooking grated carrot with milk, sugar and ghee, often flavoured with cardamom.

We took inspiration from those flavours and turned them into a fudgy Carrot & Cardamom Blondie.

Don’t Overbake Your Blondies

For that lovely fudgy, chewy texture, avoid baking until the centre is completely dry.

The blondies will continue to firm as they cool, so don’t be tempted to keep them in the oven until they resemble cake.

Let Them Cool Before Slicing

We know it’s tempting to cut straight in!

Allow your blondies to cool completely before slicing. This gives the centre time to set and makes it much easier to get neat squares.

For especially clean slices, use a large sharp knife and wipe the blade between cuts.

White Chocolate

White chocolate adds little pockets of sweetness that work beautifully with the carrot and cardamom.

You can use your favourite white chocolate, either roughly chopped or in chips, depending on what the recipe specifies.

How to Serve Halwa Blondies

These are delicious on their own, but we especially love them:

  • With a hot cup of chai
  • With tea or coffee
  • Slightly warm for dessert
  • As part of an Indian-inspired feast
  • Packed into a lunchbox for a sweet treat

Going to try some in the freezer for work snacks. I did need to use the spatula to give the mixture a bit of a mix before pouring into tin however that was very minimal in effort – just for a more even distribution. I used the choc chops. 10/10

FAQs

Do Halwa Blondies taste like carrot cake?

Not really. While both contain carrot, these are designed to have the dense, fudgy texture of a blondie, with cardamom and white chocolate giving them a very different flavour to traditional carrot cake.

How do I know when my blondies are cooked?

Look for a set top and edges with a centre that is cooked but still slightly soft. Avoid overbaking, as the blondies will continue to firm as they cool.
