Teriyaki Beef Mince Rice Bowl

When you need an easy dinner that ticks all the boxes, these Teriyaki Beef Mince Rice Bowls are hard to beat.

You get fluffy jasmine rice, vegetables, egg and beef mince coated in a glossy homemade teriyaki sauce, all finished with spring onion, sesame seeds and an extra drizzle of sauce.

With just 5 minutes prep and everything on the table in around 30 minutes, this is exactly the kind of dinner we love for busy weeknights.

What’s in a Teriyaki Beef Rice Bowl?

The complete recipe, quantities and method are in SkinnyAsia 2, but here’s a look at the main ingredients:

For the homemade teriyaki sauce:

  • Soy sauce, tamari or coconut aminos
  • Mirin (gluten-free if required) – sub with cooking sake or rice wine vinegar + 2 tsp brown sugar
  • Brown sugar or coconut sugar
  • Garlic
  • Ginger

For the bowls:

  • Beef mince or thinly sliced rump/sirloin
  • Jasmine rice
  • Eggs
  • Broccoli or edamame
  • Carrot
  • Spring onion
  • Sesame seeds

It’s a complete meal in a bowl with protein, rice and plenty of vegetables.

Homemade Teriyaki Sauce

Don’t let the homemade sauce put you off. It’s quick!

The teriyaki sauce comes together with a handful of pantry staples and is cooked until glossy and thickened.

Most of it is tossed through the browned beef, while the rest is reserved for drizzling over the finished bowls.

You can use beef mince for an easy, economical weeknight option or swap it for thinly sliced rump or sirloin.

A Great Thermo Cooker All-in-One Dinner

If you’re making the Thermo cooker version, we’ve made good use of the different levels.

While the rice and eggs cook in the simmering basket, the vegetables steam above. At the same time, simply cook your beef in a frying pan and coat it in the teriyaki sauce.

Then bring everything together in individual bowls.

Make it Your Own

Rice bowls are brilliant for using what you already have.

The recipe uses broccoli and carrot, with edamame as another option, but you can easily change the vegetables to suit your family or what’s left in the fridge.

You can also swap the beef mince for sliced steak, chicken mince or tofu using the variations included in the recipe.

Dietary & Recipe Variations

We’ve included plenty of ways to adapt these Teriyaki Beef Mince Rice Bowls.

EGG FREE
Simply omit the eggs.

LOW CARB
Swap the jasmine rice for pan-fried cauliflower rice and carrot for green beans. We’ve also included alternatives for the sugar, mirin and cornflour.

SUPER SKINNY
Use chicken mince and replace the rice with pan-fried cauliflower rice.

PALEO
Use cauliflower rice, with compliant alternatives for the mirin and cornflour.

FREEZER FRIENDLY
Freeze the rice bowl components without the eggs, then add freshly cooked egg when serving if desired.

VEGETARIAN
Replace the beef with tofu. Marinate it in the teriyaki sauce before pan-frying.

LOW FODMAP
Omit the garlic powder and cook the mince in garlic-infused olive oil. Use only the green part of the spring onion.

HALVED / DOUBLED
The recipe can be halved or doubled, with specific Thermo cooker instructions included in SkinnyAsia 2.

Meal Prep & Freezing

These bowls are also a great option for meal prep.

Divide the rice, teriyaki beef and vegetables between containers and refrigerate for easy lunches or dinners.

For freezing, leave out the boiled egg and add a freshly cooked egg when you’re ready to serve. Remember to only store rice in the fridge for 1-2 days, otherwise freeze.

How to Serve Teriyaki Beef Mince Rice Bowls

Divide the fluffy rice between bowls and arrange the teriyaki beef, vegetables and peeled eggs on top.

Drizzle over the reserved teriyaki sauce, then finish with sliced spring onion and sesame seeds.

And if you’re feeding people with different tastes, set everything out separately and let everyone build their own bowl.
