Inspired by the homeland of balsamic vinegar, this one’s an easy, family-friendly dinner that feels a little bit special without the fuss. If you don’t like bone-in chicken, you can use boneless chicken breast butterflied or thighs and grill them on the BBQ. 

This recipe was inspired by a cooking class that Grant Neal AKA took in Italy. The brief was a budget, full flavoured recipe that uses a whole chicken.

Now for the recipe we break the whole chicken down into chicken pieces, however you can leave it whole as a roast chicken or even just buy some chicken pieces – chicken thigh, chicken breast or even drumsticks. Just cook accordingly to the cut of chicken that you use.

How to Cut a Whole Chicken into Chicken Pieces

  • 1 whole chicken
  • balsamic vinegar
  • Dijon mustard
  • dried rosemary
  • dried thyme
  • garlic
  • ground white pepper
  • honey
  • olive oil
  • red onion
  • salt
  • smoked paprika
  • soy sauce, tamari, coconut aminos OR Worcestershire Sauce
