Skinnymixer’s Ricotta & Spinach Gnudi features in the Budget section of the cookbook SkinnyMediterranean.
The Ricotta & Spinach Gnudi is a cookbook exclusive recipe…
Gnudi (NYOO-dee) totally won me over the first time I made them in Florence — all the cheesy, spinachy goodness without the pasta jacket.
They’re soft little pillows that get bathed in buttery sage and lemon, and honestly, they’re way easier (and cuter) than making ravioli from scratch.

My trip to Florence
Oh how I adored Florence! The food, I found to be particularly inspiring. Simple, humble but huge flavours. I had an amazing cooking class with Laura of Cooking In Florence and learnt how to make the most delicious Gnudi.
Can you spot the Bimby (Thermomix)? The trusty TM31 is such a workhorse!
