All in One Chicken Dinner Thermomix Recipe

Ingredients

Seasoning Ingredients

  • 1 clove garlic - peeled
  • 20 g oil of choice
  • 1 Tbsp sweet/mild paprika
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1 pinch pepper and cayenne

Mash Ingredients

  • 600 g sweet potato - peeled, cut into small cubes
  • 30 g butter - optional
  • 30 g cream - optional
  • 1/4 tsp salt

Remaining Ingredients

  • 800 g liquid chicken stock - or 1 tbsp stock concentrate + 800 g water
  • 500-700 g chicken breast - sliced in half length ways
  • 400 g vegetables of choice
  • 2 Tbsp corn flour or tapioca flour - dissolved in 1/4 cup of water

Instructions

  • Add garlic to mixer bowl, chop for 2 sec/speed 9/MC on. Scrape bowl down.
  • Add remaining seasoning ingredients and mix for 5 sec/speed 3/MC on. Set aside.
  • Without washing the bowl, add the liquid stock and set the timer for 12 min/100°C or 212°F/speed 3/MC on.
  • While the stock is heating up, prepare your sweet potato and place it into the simmering basket. Prepare your chicken by coating well in the reserved seasoning paste and placing in the deep steaming tray. Prepare your veggies and place into the flat steaming tray.
  • Put the simmering basket with the sweet potato into the mixer bowl and set the timer for 20 mins/steaming temp/speed 4. Put your steaming trays with the chicken and vegetables in place. You may need to turn your chicken over half way through. If you are feeling organised, clean your kitchen!
  • When the chicken and vegetables are cooked, set aside in a thermal server to keep warm. Set the sweet potato to the side.
  • Retain 500 g or 17.6 oz of the liquid stock in the bowl and add your corn flour mixture, cook for 5 min/100°C or 212°F/speed 2/MC off.
  • When the gravy has thickened to your liking and seasoned to your tastes, remove it to a gravy boat to keep warm and without washing the bowl, put your mash ingredients, including the reserved sweet potato, into the bowl and blend for 10 sec/speed 5/MC on.
  • Insert butterfly and whip for 20 sec/speed 3/MC on.
  • Serve.

Notes

You don't have to turn the sweet potato into mash if you don't want to.
This wont work as mash with white potato, but you can serve white potato as chunks with butter and salt on top.
If you are using soft vegetables, like broccoli or zucchini, add it in the last 10 minutes of cooking time - they dont need the full 20.
Bellini Users
Use blunt blade with this recipe.
At step 5 use ST temp, speed 3 and put a tea towel over your steamer if using an Intelli, use 130°C or 270°F and speed 4 if using a Supercook.
At step 7 cook for longer, until thickened.

  1. Made this last night, great, easy way to do meat and veg. The gravy was not a hit for me though. I used veg stock paste in the water, so it was a light green colour. It stayed this colour even after cooking the sweet potato. The gravy was just thickened veg stock and wasn’t overly appealing as a bright green sauce on my chicken. HA! Love the all in one idea though, so will do again, but perhaps look for a different ‘sauce’.

  2. made this for the first time tonight I used xantham gum to thicken the gravy but like others I found the gravy bland as well nothing that a little salt and pepper didnt fix

  4. The seasoning on the chicken is nice. The ‘gravy’ was bland. This just felt like a really long way to make steamed chicken and veg. Could make this dish a lot quicker other ways. Will make the chicken in this marinade again. My husband wants to throw my Thermomix out the window 🙁

  5. We found this delicious – great for the whole family – 6yrs 4yrs and 8mths! Found the gravy a little bland but a dash of worcestershire sauce and some bbq seasoning was all i needed to add. Mash was fantastic! Definitely on the regular list

  7. I made this tonight and again another Skinnymixers awesome recipe. Only thing is I put a bit more chicken so had to cook for another 10 mins but very yummy indeed.

  8. Finally got around to making this! So delicious and easy! I have a Bellini and just added around 5 mins extra cooking time and it was perfect! My daughter is GF and has been sick for a week, so I wanted a vitamin/vege packed meal for her! She absolutely woofed it down! Winning!

    Pretty sure it was the first thing I made in the Thermomix and it’s been a favourite ever since.

Simple yet full of flavour, It’s something special to turn every day ingredients into a meal you’d serve your Mother in Law 😉 I found the sauce a little runny but that wasn’t a problem with all the chicken/mash to mop it up. Might work on reducing it down a little in future just to keep the kids surroundings a little cleaner – they aren’t the neatest eaters!

  13. Looks like i am the odd one out. Me and my family weren’t a fan. I think the texture of steamed chicken is the problem, not so much the flavours of the dish. Sweet potato mash was on point though. Is there a trick to steaming chicken. I have tried 3 times and haven’t been a fan at all each time – maybe it’s me!?

    In general though, i love skinnymixers!

  14. I swapped the sweet potato for cauliflower to reduce carbs. This obviously messed with the final taste of the gravy as it was quite bland. The cauliflower mash and chicken were lovely. I’ll be interested to try it with the sweet potato in the future.
