All-in-one Chicken Dinner

Ingredients

Seasoning Ingredients

  • 1 clove garlic - peeled
  • 20 g oil of choice
  • 1 Tbsp sweet/mild paprika
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1 pinch pepper and cayenne

Mash Ingredients

  • 600 g sweet potato - peeled, cut into small cubes
  • 30 g butter - optional
  • 30 g cream - optional
  • 1/4 tsp salt

Remaining Ingredients

  • 800 g liquid chicken stock - or 1 tbsp stock concentrate + 800 g water
  • 500-700 g chicken breast - sliced in half length ways
  • 400 g vegetables of choice
  • 2 Tbsp corn flour or tapioca flour - dissolved in 1/4 cup of water

Instructions

  • Add garlic to mixer bowl, chop for 2 sec/speed 9/MC on. Scrape bowl down.
  • Add remaining seasoning ingredients and mix for 5 sec/speed 3/MC on. Set aside.
  • Without washing the bowl, add the liquid stock and set the timer for 12 min/100°C or 212°F/speed 3/MC on.
  • While the stock is heating up, prepare your sweet potato and place it into the simmering basket. Prepare your chicken by coating well in the reserved seasoning paste and placing in the deep steaming tray. Prepare your veggies and place into the flat steaming tray.
  • Put the simmering basket with the sweet potato into the mixer bowl and set the timer for 20 mins/steaming temp/speed 4. Put your steaming trays with the chicken and vegetables in place. You may need to turn your chicken over half way through. If you are feeling organised, clean your kitchen!
  • When the chicken and vegetables are cooked, set aside in a thermal server to keep warm. Set the sweet potato to the side.
  • Retain 500 g or 17.6 oz of the liquid stock in the bowl and add your corn flour mixture, cook for 5 min/100°C or 212°F/speed 2/MC off.
  • When the gravy has thickened to your liking and seasoned to your tastes, remove it to a gravy boat to keep warm and without washing the bowl, put your mash ingredients, including the reserved sweet potato, into the bowl and blend for 10 sec/speed 5/MC on.
  • Insert butterfly and whip for 20 sec/speed 3/MC on.
  • Serve.

Notes

You don't have to turn the sweet potato into mash if you don't want to.
This wont work as mash with white potato, but you can serve white potato as chunks with butter and salt on top.
If you are using soft vegetables, like broccoli or zucchini, add it in the last 10 minutes of cooking time - they dont need the full 20.
Bellini Users
Use blunt blade with this recipe.
At step 5 use ST temp, speed 3 and put a tea towel over your steamer if using an Intelli, use 130°C or 270°F and speed 4 if using a Supercook.
At step 7 cook for longer, until thickened.

    I may have overcooked my chicken a little, but that was my fault.

  4. I left some of the marinade in the Thermomix to make the gravy after reading the comments, I also added a teaspoon of dijon mustard in at the end, was full of flavour. My veggies were zucchini, carrots,corn on cob and sweet potato.

  5. We really liked this meal. I prepared for the worst with the gravy based on passed comments but I enjoyed it. It was a light flavour that complimented the meal. I used the Thermobites chicken stock powder.

  9. I was concerned when i read the comments about the bland gravy but my gravy was so tasty. Instead of adding 1/4 cup water to thicken the corn flour before hand, I just scooped out 1/4 cup from the 500ml of the gravy I put aside, then i mixed it back together. It was so delicious. I didnt even add the salt in the sweet potato mash as it didnt need it. It was seriously a delicious meal xx

  11. Made this last night, great, easy way to do meat and veg. The gravy was not a hit for me though. I used veg stock paste in the water, so it was a light green colour. It stayed this colour even after cooking the sweet potato. The gravy was just thickened veg stock and wasn’t overly appealing as a bright green sauce on my chicken. HA! Love the all in one idea though, so will do again, but perhaps look for a different ‘sauce’.

  12. made this for the first time tonight I used xantham gum to thicken the gravy but like others I found the gravy bland as well nothing that a little salt and pepper didnt fix

  14. The seasoning on the chicken is nice. The ‘gravy’ was bland. This just felt like a really long way to make steamed chicken and veg. Could make this dish a lot quicker other ways. Will make the chicken in this marinade again. My husband wants to throw my Thermomix out the window 🙁

Simple yet full of flavour, It’s something special to turn every day ingredients into a meal you’d serve your Mother in Law 😉 I found the sauce a little runny but that wasn’t a problem with all the chicken/mash to mop it up. Might work on reducing it down a little in future just to keep the kids surroundings a little cleaner – they aren’t the neatest eaters!

  23. Looks like i am the odd one out. Me and my family weren’t a fan. I think the texture of steamed chicken is the problem, not so much the flavours of the dish. Sweet potato mash was on point though. Is there a trick to steaming chicken. I have tried 3 times and haven’t been a fan at all each time – maybe it’s me!?

    In general though, i love skinnymixers!

  24. I swapped the sweet potato for cauliflower to reduce carbs. This obviously messed with the final taste of the gravy as it was quite bland. The cauliflower mash and chicken were lovely. I’ll be interested to try it with the sweet potato in the future.

  29. Winner winner, all in one chicken dinner! I absolutely love this recipe – it’s super easy and the best to ‘whack on’ after a full day at work when I come home to hangry children. I change up the steamed veggies to suit what we have on hand and sometimes I sub the cornflour for gravox for a different gravy flavour. It gives me time to whizz through the kitchen on a cleaning frenzy and serving up is quick and painless. Thanks again Nik!

  33. Thanks Nik, this totally exceeded all of my expectations. I used liquid veg stock with some chicken stock powder as I have yet to make the thermo stock. It was truly delicious and inhaled by my teenage son with dibs on leftovers.

  34. The chicken and the gravy are delicious! I did have major issues with the cooking time, especially of the chicken. It just wasn’t cooked through. The veggies weren’t cooked wither. It may have been as I used smaller pieces and they may have stopped the steaming process.

  39. I love this recipe and it was well received by my husband the first time I made it. He asked for more gravy as he said it tasted amazing. Recipe makes enough for some to go in the freezer as a TV dinner for when you don’t have time to whip something up.

    1. My husband hates sweet potato but loves this sweet potato mash… Give it a go even if no one usually likes it – they may just like it prepared this way with the extra flavours through it … It’s my favourite bit of the meal!

We are a paleo family so I ended up transferring the gravy to a wide pan over high heat to reduce it quicker, Next time I will reduce the water and add extra veg to throw in to thicken the gravy to keep it quick. Massive hit with master 3 who happily ate the leftovers for 2 days.

    This is truly an amazing and simple dish, the whole family enjoyed it and my son who doesn’t like gravy or sweet potato still enjoyed the chicken with other vegetables on its own.   64. Delicious! Enjoyed by the whole family and so easy and affordable The mash is definitely the standout feature of this dish. I love sweet potato mash but this is at a whole new level.
    My tip would be to dissolve the flour in hot water (or hot stock) so it ‘cooks’ a bit first and then put it at the Veroma temp instead. This makes a thicker gravy.

  74. Im a student and a carer, so cheap quick meals are so important for me. This all in one dinner is great hot AND cold for left overs. Uni lunches made easy! I can shower and get ready for school while thermi is doing his thing, making succulent chicken.
    Word of warning: don’t get over confident and use a lot of chicken! This will take longer to cook. I learnt that the first time.

    Was a big hit and super easy so will definitely make again. I was about 100gm short with sweet potato so added some white to make it up and it still worked perfectly. I could of sat and eaten all the mash to myself, so yummy.

  95. A great meal and smooth mild gravy that would suit young children or people who don’t like heat in their meals. I put sliced carrot in the varoma tray and the chicken to cook for 10 mins so I wouldn’t forget to turn it (I’m a bit forgetful sometimes!). In the second lot of 10 mins, I added broccoli to the carrot tray.
    I also omitted the sweet potato as we’re keeping our carbs down at the moment but I managed to make this between cleaning the kitchen, feeding my baby dinner, putting her to bed and setting the table! My nearly 9 year old stepson added extra gravy, munched it all down!

  96. Definitely a winner in this house. If using white potato I would only mix for 15 secs not 20. Still tastes great though!
