Ingredients
- 400 g basmati rice - Riviana brand
- 400 g coconut milk
- 500 g water
- 2 tsp turmeric powder
- 100 g raw cashew nuts
- 80 g sultanas
- 1-2 tsp nigella seeds - optional but recommended
Instructions
- Weigh rice into simmering basket, rinse under cold water thoroughly.
- Put coconut milk, water and turmeric into mixer bowl. Insert simmering basket with rice.
- Put cashew nuts, sultanas and nigella seeds on top of rice. Cook for 16 min/speed 4/steaming temp/MC on.
- Check that rice is cooked, if it needs longer then cook for a little longer. Once rice is done, remove from mixer bowl to a large serving bowl and carefully stir through. Discard the liquid.
Notes
Bellini Users
At step 3 use speed 3 if you have an Intelli and speed 4 if you have a Supercook and cook for longer if required.
