Macaroni cheese with a twist Thermomix hidden vege recipe

My most favourite freezer meal in the world… Macaroni Cheese with a Twist (Macaroni Cheese Thermomix recipe with 4 different hidden vege!).

This healthy kids Thermomix recipe is so incredibly easy to make and makes A LOT. I like to make this for dinner and then freeze any leftovers in portions for easy kids dinners.

Over the years this Macaroni Cheese Thermomix recipe has saved the sanity of so many Skinnymixers parents, who needed to try and get their children to eat more vegetables.

This Macaroni Cheese Thermomix recipe is a fantastic base recipe, that you can easily adapt to your family’s taste. Some prefer to swap the ham for crispy bacon or tinned tuna or even crispy chorizo… drool!

Whichever way you decide to go, one of the best tips when making this recipe is to cut your vegetables small and really make sure it is cooked well before blitzing. This will avoid any strange texture from slightly undercooked vegetables.

If you are making this Hidden Vegetable Mac n Cheese for a fussy eater, you may find this fantastic ‘Thermomix Recipes for Toddlers:Surviving a Fussy Eater’ recipe guide useful.

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 8
Calories: 350kcal

Ingredients

  • 100 g cheddar cheese - 2 cm cubed
  • 60 g parmesan cheese - 2 cm cubed
  • 100 g sweet potato - peeled, 1 cm cubed
  • 100 g carrot - peeled, 1 cm cubed
  • 100 g pumpkin - peeled, 1 cm cubed
  • 1 zucchini - roughly chopped (peeled if you don't want your children to spot the microscopic green specks)
  • 300 g macaroni
  • 500 g milk
  • 50 g spelt or plain flour
  • 40 g butter - 1 cm cubed
  • 200 g ham - diced
  • 1 tsp dijon mustard
  • 1/2 tsp mild paprika powder
  • 1 Tbsp chicken stock concentrate
  • 1 pinch freshly cracked black pepper

Instructions

  • Add cheeses into mixer bowl, mill for 10 sec/speed 9/MC on. Set aside.
  • Place 1,200 g or 42.3 oz water into mixer bowl, boil for 10 min/steaming temp/speed 1/MC on.
  • While the water is boiling, prepare your vegetables making sure they are cut very small and put into the large steaming tray.
  • After 10 mins, add your macaroni to the boiling water, and put your large steaming tray in place.
  • Cook for 10 min/steaming temp/speed 1/reverse.
  • Drain macaroni and put into a large thermal pot to keep warm.
  • Put your steamed vegetables into the mixer bowl with 100 g of the milk, purée for 30 sec/speed 8/MC on or until smooth.
  • Stir puréed vegetables through macaroni.
  • Put flour, remaining milk & butter into mixer bowl, cook for 6 min/90°C or 195°F/speed 2/MC on. While this is cooking you may like to pan fry your ham (or bacon if preferred).
  • Add ham, reserved cheeses, mustard, paprika, stock concentrate and pepper to mixer bowl. Cook for 2 min/90°C or 195°F/speed 2/reverse/MC on.
  • Pour sauce over maraconi and stir through. I highly recommend you give it a taste at this point, and add a pinch or two of salt depending on your preference.

Notes

This makes a large amount of food, at least 8 large serves. It freezes and defrosts well.
This was adapted from the Macaroni Cheese recipe in the toddler cookbook, for added vegetables and flavour 🙂

Healthy Mac n Cheese with a Twist Hidden Vegetable Thermomix recipe

  1. Absolutely love this recipe, thank you Nikalene! I made it with bacon that I half seared before adding and it’s so tasty, the kids ask for second servings.
    A++ for the fussy kiddies!

  2. Just made this for an ‘occasionally fussy’ 12yo son and his friend (who struggles with vegies) and it was a hit. I didn’t get rave reviews but wasn’t expecting that with a friend over! LOL I used almond milk and gluten free flour (Orgran) and the sauce was great. I also used gluten free pasta which I would probably do on stove next time as it needed more water. It wasn’t as salty as I thought it might be but I also used ‘pizza blend’ cheese because that’s all I had so maybe with the tasty/parmesan combo that would be different. I also fried up some pieces of bacon until crispy to have over it and it was delish! Thank you, this is going to be on our treat menu 🙂

  3. Another absolute winner. Super easy recipe to follow and great flavors. A great sneaky twist on a classic.

  4. You are a genius Nik! My fussy 2yo gobbled his up (he has previously refused my own recipe for mac’n’cheese) and my 9mo had seconds! I loved it too and there’s plenty left for tonight as well. Winner! Thankyou.

  5. A real winner for us, phew! I quote Ms 3: “This pasta is so good. It’s yummy – I will gobble it all up!” and she promptly proceeded to do just that. Ms 12 also said it was yummy as she rushed back out the door to continue her game of Monopoly Empire!! So glad to get pumpkin and zucchini into both of them. Thanks ever so much.

  6. Ive just made this up making 18 toddler side lunch serves to freeze and a lunch serve for me too! Enough for me to sample also! Yum. 18mo loves it too!

  7. Miss 2 and Miss 7 licked their bowls and requested it for dinner tomorrow night! A hit in our house and with so much hidden veg it will be a regular part of our menu

  8. Just scrumptious! Think I overdid the beige quantities and only used what I had- pumpkin, cauliflower and carrot. Also had only tasty cheese. I’m sure when I go back again with some more cheese flavours it will be even more delish.

  9. This is super tasty! I love to add sautéed mushroom and onion as well. Love this dish. The sauce freezes well too!

  10. Very tasty. Big hit with my baby who did her first sleep through afterwards! Not toddler approved here yet but will keep trying (refused to touch it). Lovely recipe 🙂

  11. Holy moly sooo much sauce!!! Was way too much sauce-pasta ratio for my kids so I cooked an extra 500g pasta & added it in to suit their taste. Not that the bothers me cause they WOLFED it down & I now have 6 dinners for them in the freezer ready to go for when I’m feeling lazy 🙂 this sauce is the bomb Nik, am going to make it for me & hubby one night & add the bacon & some chicken. Thanks for another amazing recipe Nik!

  12. Fantastic! Made this for my vege loving – but sauce/food mixed together hating 2.5yr old. She (with encouragement) ate up a big dish. However – after tasting the sauce………my husband and I also had a bowl for dinner. Yummo! Another 5 star recipe from Skinnymixers.

  13. This is absolutely delicious! I added some leftover baked salmon that I chopped up in the last two minutes instead of the ham and it was awesome! The five of us are the lot even though it is supposed to feed 8, whoops!

  14. Amazing! A new family and none of my 3 kids not husband had any clue it contained no chees. They loved it and asked for seconds.

  15. My Eldest partner and myself liked it.. My other 2 kids didn’t but i will add a it more cheese next time 🙂

  16. This went down a treat! I can’t get over the beautiful colour the veggies make for the sauce. My boys are big packet Mac n Cheese fans and they were stoked to see this served up for dinner. Thank you for sharing your recipe 🙂

  17. After a particularly trying day with my two vegie hating mini’s I thought I needed some kind of payback so made them this delish Mac n Cheese *cough* *cough* WITH VEGGIES *cough* and neither picked up on the goodness they were gobbling down. Awesome! I’ve frozen the rest for future pick ME ups 😛

  18. This recipe is fantastic. It was a big hit with my 2 and 4yo, as well as hubby. They ate it up so fast, was nice not to argue with them about eating their dinner for once. Plus it’s packed with veggies that you can’t even taste. Will be a regular in our house!

  19. Any recipe that can pack more veges into my families meals is a winner. Another tasty, quick easy & makes a heap recipe!

  20. Amazing! My partner and 6 year old loved it! My daughter does eat veggies (sometimes) but this was a much easier way to get her to eat them. Would be great for kids that don’t like them too!
