Macaroni cheese with a twist Thermomix hidden vege recipe

My most favourite freezer meal in the world… Macaroni Cheese with a Twist (Macaroni Cheese Thermomix recipe with 4 different hidden vege!).

This healthy kids Thermomix recipe is so incredibly easy to make and makes A LOT. I like to make this for dinner and then freeze any leftovers in portions for easy kids dinners.

Over the years this Macaroni Cheese Thermomix recipe has saved the sanity of so many Skinnymixers parents, who needed to try and get their children to eat more vegetables.

This Macaroni Cheese Thermomix recipe is a fantastic base recipe, that you can easily adapt to your family’s taste. Some prefer to swap the ham for crispy bacon or tinned tuna or even crispy chorizo… drool!

Whichever way you decide to go, one of the best tips when making this recipe is to cut your vegetables small and really make sure it is cooked well before blitzing. This will avoid any strange texture from slightly undercooked vegetables.

If you are making this Hidden Vegetable Mac n Cheese for a fussy eater, you may find this fantastic ‘Thermomix Recipes for Toddlers:Surviving a Fussy Eater’ recipe guide useful.

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 8
Calories: 350kcal

Ingredients

  • 100 g cheddar cheese - 2 cm cubed
  • 60 g parmesan cheese - 2 cm cubed
  • 100 g sweet potato - peeled, 1 cm cubed
  • 100 g carrot - peeled, 1 cm cubed
  • 100 g pumpkin - peeled, 1 cm cubed
  • 1 zucchini - roughly chopped (peeled if you don't want your children to spot the microscopic green specks)
  • 300 g macaroni
  • 500 g milk
  • 50 g spelt or plain flour
  • 40 g butter - 1 cm cubed
  • 200 g ham - diced
  • 1 tsp dijon mustard
  • 1/2 tsp mild paprika powder
  • 1 Tbsp chicken stock concentrate
  • 1 pinch freshly cracked black pepper

Instructions

  • Add cheeses into mixer bowl, mill for 10 sec/speed 9/MC on. Set aside.
  • Place 1,200 g or 42.3 oz water into mixer bowl, boil for 10 min/steaming temp/speed 1/MC on.
  • While the water is boiling, prepare your vegetables making sure they are cut very small and put into the large steaming tray.
  • After 10 mins, add your macaroni to the boiling water, and put your large steaming tray in place.
  • Cook for 10 min/steaming temp/speed 1/reverse.
  • Drain macaroni and put into a large thermal pot to keep warm.
  • Put your steamed vegetables into the mixer bowl with 100 g of the milk, purée for 30 sec/speed 8/MC on or until smooth.
  • Stir puréed vegetables through macaroni.
  • Put flour, remaining milk & butter into mixer bowl, cook for 6 min/90°C or 195°F/speed 2/MC on. While this is cooking you may like to pan fry your ham (or bacon if preferred).
  • Add ham, reserved cheeses, mustard, paprika, stock concentrate and pepper to mixer bowl. Cook for 2 min/90°C or 195°F/speed 2/reverse/MC on.
  • Pour sauce over maraconi and stir through. I highly recommend you give it a taste at this point, and add a pinch or two of salt depending on your preference.

Notes

This makes a large amount of food, at least 8 large serves. It freezes and defrosts well.
This was adapted from the Macaroni Cheese recipe in the toddler cookbook, for added vegetables and flavour 🙂

  1. mac & cheese with a twist – so very delicious. Made it exactly to the recipe and was just perfect. As a kid we were Kraft Mac & cheese fans – never again!!! Xx thanks Nikalene

  2. Not just my kids, but my entire family love this! I have made the sauce and done it as a pasta bake For something different as well or poured the sauce over vegetables and baked it like cauliflower cheese. Amazing.

  3. Hubby made this last night for us big kids :p We loved it. Daughter is dairy free hence why it wasn’t made for the kids, but our son enjoyed it for lunch today too.

    Super yum!

  6. We’re away in our caravan (2 adults 4 kiddies) and our beloved thermarelda has come for the journey also (that’s a given!) Mac and cheese for tea tonight. Its a definite easy go to for a lazy saturday! Thanks for the recipe love!

  7. i just made this for my toddler for dinner as I’m going out tonight. It has made me want to cancel my plans and stay home eat mac & cheese instead!

So cheesy and delicious. I halved the recipe and got 5 large toddler-sized servings.

  8. Making it tonight for second time … Been requested a few times prior to this but did have any pumpkin…, 6 yr old and other half don’t do pumpkin or zucchini ….yeah
They do in Mac and cheese … Added tuna instead of ham first time, just fried up some bacon for tonight’s Mac !! Yum yum yum … U r an amazing cook

  9. Another great recipe! Very filling with all the vegetables. I didn’t peel the zucchini but it was fine enough so it wasn’t noticeable. Makes an enormous amount.

  10. Made this twice now and used different veggies both times. It’s now portioned up in my freezer for my 14 and 18 year olds to just grab. Thanks Nic they love it ❤️

  11. Although there are only adults in our house all four of us loved this with just a small tweak to allow for my daughter’s allegies, no rice and no wheat

  12. Delicious! And now a weekly staple in our house, my toddler & husband love it as much as I do. I also love that this makes more than enough for 2 nights dinners with even some to freeze 🙂

  13. Loved this! I have made my lunch for work for the next few weeks and put them all in the freezer. I fried up some bacon and used that instead of ham. I loved it!!

  14. Another brilliant recipe! My almost one year old scoffed it and hubby loved it too. The super fussy 4 yr old refused to try it but, apart from being ridiculously fussy, he’s also just finished his second day of preschool so is exhausted and cranky so I wasn’t going to push him! Thanks Nikalene 🙂

  15. OMG…. I cant believe that my kids ate all those veges in one sitting !! fabulous recipe. I have never made them Mac n Cheese ever so I was a bit worried that they might not like it, but they ate it all, and went back for seconds!! This recipe made heaps with lots left over for tomorrow, and the kids have asked to have this for tomorrows dinner too ! Another winning recipe from Skinnymixers !

  16. Great recipe! My 3 year old kept asking for more and ate three bowls in one siting. I made the sauce seperate as wanted to freeze just the sauce as we prefer fresh pasta, but perfect for an easy and health dinner!
    Thankyou!!!

  17. Cooking for two fussy teenagers and a big-eater husband. Everyone loved it! Also made plenty for secondsies for husband and son! Thanks Nik!

  18. DELICIOUS! made it tonight and can barely stop myself eating it. My twins loved it not knowing there’s so much goodness packed into it and one of them is a picky eater who thinks vegetables are out to kill her. Well done Nik! This is going to be a regular in our house.
