Growing up, at the end of the week when the veggies were looking a bit sad in the fridge, Mum would chuck them into an “easy quiche” to give them new life. The idea behind this recipe is the same thing – while I have provided a guide for what veggies you can use, you should chuck anything in that you’ve got as per the tip!

- plain flour - gluten-free if required
