Growing up, at the end of the week when the veggies were looking a bit sad in the fridge, Mum would chuck them into an “easy quiche” to give them new life. The idea behind this recipe is the same thing – while I have provided a guide for what veggies you can use, you should chuck anything in that you’ve got as per the tip!

    So disappointed this didn’t work for me. Was too wet, not a “slice” consistency. More like a congealed mess, grainy texture. I ended up blending it to a mash like consistency to make it it edible, flavours were good.

    Great recipe Nik!
    I didn’t have a couple of the “main” ingredients so substituted some extra veggies that needed using (pumpkin and capsicum used instead of sweet potato and zucchini) – because of this, I was sceptical, but it was beautiful! Will be whipping this one up each fortnight to ensure no veggies end up in the bin! Thanks for always creating reliable recipes!
