Sometimes I just don’t feel like eating a heavy dinner, particularly in the warmer months – but that doesnt mean I don’t want heavy flavour.

These Fragrant Chicken Lettuce Cups are super healthy and are a great meal prep idea too – make the shredded chicken and keep it in the fridge for quick salads, sandwich fillings or just eat it with a fork!

The inspiration behind this healthy light dinner is a Thai Larb – but without the fat and oil.

I really wanted to incorporate the big, fresh flavours of the  fresh coriander or Thai basil, fresh mint, chilli, garlic and ginger with the lower calories of shredded chicken breast and lettuce. I guess you can think of it like a Larb inspired lettuce wrap.

The fresh herbs and bold flavours are definitely the star of the show for this recipe. If you don’t have the fresh herbs, we don’t recommend substituting with dried spices. If you don’t like coriander, you can absolutely use Thai Basil instead – it is still delicious!

  • birdseye chilli
  • coconut sugar or brown sugar
  • fish sauce
  • fresh coriander leaves or Thai basil leaves
