Packed with all of my favourite Greek ingredients and the unique texture of Pearl Couscous (also known as Israeli couscous), there’s no other dish that can match its flavour combination.
Before developing this healthy dinner recipe for The Healthy Mix Dinners I had never cooked with Pearl Couscous before and had no idea that it was like toasted balls of pasta and not like your typical couscous…. UMMM YUM!!
Unfortunately Pearl Couscous isn’t gluten-free (well none that we could find!) but don’t worry, you can can also use
- basmati rice,
- quinoa or
- cauliflower rice alternatives.

To cook the lamb in this recipe you can either steam sliced, marinated lamb in the Thermomix or there are also instructions to pan fry, roast in the oven or smoke in the barbecue.

- 800 g lamb rump steak
- garlic
- sweet paprika
- baby tomatoes

- pearl couscous or basmati rice
- feta
- Kalamata olives
- Greek yoghurt
- fresh lemon juice or red wine vinegar
- Chicken Stock Concentrate
- dried oregano leaves
- red onion
