We have written a couple of Chili recipes now, but surprisingly when we perfected this one everyone in the kitchen agreed – it’s the best yet – and no meat! Not needing to add meat makes this dinner recipe very budget friendly and also super quick to whip up!
This is such a versatile Thermomix recipe (with regular conventional cooking methods too) that can be made and stretched across multiple meals over a few days – for example:
- Nachos
- followed by loaded jacket potatoes
- and finishing up with a Mexican inspired lasagne or wraps!
I was so surprised at how little you miss meat in this Vegetarian Chili recipe. Between the mushrooms, beans and capsicum you are definitely satisfied and feel like you’ve just had a bowl of warming Chili!
