Feel free to use the high heat function on your Thermomix to brown the chorizo if you wish, however it does brown better in a fry pan.

 

What ingredients you will need

  • brown onion
  • chicken thigh
  • chilli flakes
  • chorizo – you can use milder or spicier chorizo based on your preference. It should be cured, not a raw sausage.
  • cracked black pepper
  • cream of choice – for dairy-free we recommend Flora Plant Based cream
  • garlic
  • olive oil
  • Parmesan cheese – this is purely for serving, you can skip or you can use cheese of choice too. Dairy-free can use nutritional yeast.
  • passata – I like the Mutti brand of passata. Some of the cheaper brands are a bit too acidic.
  • penne (gluten-free if required)
  • Stock Concentrate
  • sugar of choice
  • tomato paste
  • Worcestershire sauce

Tips & Dietary Needs

  • No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock. 
  • Don’t like chorizo? Try using some bacon or adding some sun-dried tomatoes to the sauce (just a little, to taste).
  • Boost the protein – Add some additional cooked chicken on serving.
  • Dairy-free – Flora Plant Based Cream is great in these kids of dishes that you don’t want a coconut taste.
  • Gluten-free – You can cook in the sauce or choose to cook the Sauce only option, so you can have better cooking control over the fragile pasta on the stovetop.
  • Low carb/Paleo – Use compliant chorizo or bacon. Cook sauce only and serve over zoodles. Use compliant sweetener and sauces.
  • Lower calorie – Halve chorizo. Use chicken breast. Use low-fat cream.
  • Go veggie – Use vegetable stock concentrate. Replace chorizo with mushrooms and replace chicken with capsicum and zucchini, sliced.
  • Low Fodmap – Use compliant chorizo or bacon. Use gluten-free pasta. Omit garlic and use garlic infused olive oil. Replace onion with 1–2 spring onions (green part only). Use compliant stock concentrate and lactose-free cream.
  • Spice Level – This pasta can have a bit of a kick from the chilli flakes and the chorizo, so if you are spice sensitive try reducing the chilli flakes by half or even less.

How to Cook

  1. Brown chorizo.
  2. Sauté garlic and onion.
  3. Heat cooking liquid for pasta.
  4. Add pasta and chicken, to cook.
  5. Stir through cream. 

How to Serve

  • Toppings – serve with some grated Parmesan cheese, crispy chorizo and fresh parsley if desired. 

Storage & Meal Prep

  • Fridge – Store in the fridge for up to 3 days.
  • Freezer – This recipe is nice and saucy, perfect for freezing.
  • Make ahead – freeze cooked for up to three months.

From the Testing Team

  • Mark R – Omg this is good, I browned the chorizo using the high heat function in the TM7 then picked out to chop the onion and garlic with tongues. I didn’t put the chorizo back in until after cooking the onion and garlic which worked perfectly. I did 10 minutes on the browning function, there was some burning but this was consumed by cooking the onion and the rest of the recipe. Nice all in one for the TM7. Increased last cook 2 mins and sat for 15 min.
  • Jodi H – Delicious!! Cooked the chorizo on high heat which was great but probably would be more consistent browning in a frypan. Definitely will be making it again! 😍
  • Paula M – Tasty! My pasta needed a little longer but it was the type of pasta I used. I also browned the chorizo in the TM6 using the 250g chicken strip recipe which cooks for 7 minutes and it worked well as it needs 20g of oil so I just didn’t add that later. Tipped the chorizo/oil into a bowl so I could then blitz the onion and garlic. I also like to cut my chorizo into half moons coz when they are round I find they get stuck/skewered onto the blades. My only negative is that I think there was probably too much chorizo?? I know it sounds crazy 😂

FAQs

Can I replace the chorizo?
Sure! Try some diced bacon.

Is it spicy?
It can be a little spicy depending on your chorizo and the chilli flakes. You can reduce the chilli flakes down and use a milder chorizo. Try mixing through more cream if it is too spicy after cooking.
