The Chicken Florentine Potato Bake is literally the definition of comfort food for me. Creamy, cheesy alfredo sauce smothered over tender chicken and layers of potato and spinach. If you love potato bake… this recipe in our Dinners 4 cookbook is a MUST MAKE.

What ingredients you will need

  • 1kg chicken thigh
  • baby spinach
  • butter
  • cream of choice
  • dry white wine
  • flour
  • garlic
  • ground nutmeg
  • mozzarella
  • onion powder
  • Parmesan cheese
  • potatoes – thinly sliced, you can use the Thermo cutter!
  • Stock Concentrate

Tips & Dietary Needs

  • Protein swap – We have instructions on how to change the chicken thighs to chicken breast in the book. I imagine pork chops would also be delicious!
  • No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock.  
  • Dairy-free – Use dairy-free mozzarella and nutritional yeast. Use dairy-free cream, we find Flora Plant based cream works best in dishes that you don’t want to taste like coconut.
  • Low carb – Replace potato with cauliflower. Replace water with cream. Replace flour with ½ tsp xanthan gum sprinkled in.
  • Lower calorie – Halve mozzarella. Replace Parmesan with nutritional yeast. Butterfly chicken breast, sear for a couple of min each side . Use low-fat cream and replace half the potato with cauliflower if desired.
  • Paleo – Omit mozzarella. Replace potato with sweet potato. Replace flour with ½ tsp xanthan gum sprinkled in.
  • Go vegetarian – Replace Chicken with half the amount of Swiss brown mushrooms and 1 tin butter beans, rinsed. Use vegetable stock concentrate.
  • Low Fodmap – Omit garlic. Replace butter with garlic infused olive oil. Replace onion powder with dried chives or chopped spring onion (green part only). Use compliant stock concentrate and lactose-free cream.

How to Cook

  1. Preheat oven and brown chicken on both sides.
  2. Grate cheeses.
  3. Make the sauce in the Thermomix or a saucepan.
  4. Lay prepared potatoes over the base of the baking dish and pour over half the sauce.
  5. Stir through cheese and spinach in remaining sauce.
  6. Arrange chicken on top of potato and pour over the sauce.
  7. Bake in the oven until potatoes are tender.

How to Serve

  • Serve with some crusty bread or some additional steamed green vegetables if desired.

Storage & Meal Prep

  • Fridge – store in the fridge for up to 3 days.
  • Thawing from frozen: Let it sit in fridge overnight, then warm gently (or enjoy cold).
  • Make ahead – freeze cooked for up to three months.

FAQs

Can I use a PYREX or ceramic dish if I don’t have a metal baking dish?
You can, but it will take longer for the potatoes to cook. You can also try preheating the dish to help it cook faster.

Can I use my Thermomix Cutter?

Yes, we tested both thin and thick cut. The thin is better but both work, just cook until tender.
