skinnymixer's Vanilla Chai Powder

Dirty Chai is my absolute favourite drink to order when I get the luxury of sitting down at a cafĂ©, and I knew that it was full of sugar but what I didn’t know was what else went into ‘chai’ mix…

after doing some research I have discovered that most commercial mixes contain ingredients like corn syrup, soy and preservatives… as well as the ominous “flavouring” and “colouring” ingredients. While these things probably wont kill you with an occasional treat, if you do like to avoid additives and preservatives then making your own delicious Thermomix Chai mix at home is very easy.

The bit I love about making my own mix at home is that I can sweeten it to preference: I prefer to be able to only use a small amount of coconut sugar in mine.

Vanilla Chai Powder

Ingredients

  • 2 tbsp cinnamon powder
  • 1 tbsp ginger powder
  • 1 tbsp cardamom powder
  • 1 tbsp vanilla bean powder
  • 1/2 tbsp nutmeg powder
  • 1 tsp clove powder
  • 2 pinches of black pepper

Instructions

  • Add all ingredients to mixer bowl, mill for 2 min/speed 9/MC on. TIP: Put a piece of paper towel under your measuring cup to stop the "powder" from billowing out.

To Use

  • ~ 1/4 tsp of this spice mix per 1 cup of coffee or warmed milk. Sweeten to taste, with a recommended 1-2 tsp of preferred sugar.

Notes

If you prefer to use whole spices, here are the weights - please note, you will need to use kitchen scales for measuring these out:
10 g cinnamon stick
6 g whole cardamom pods
4 g nutmeg
2 g cloves
Bellini Users
Use your sharp blade for this recipe.
At step 1 do 2 x 1 minute making sure to rest the machine for a minute or so in between to avoid potential overheating.

  2. Don’t know why I haven’t made this earlier. I ground it up and then put aside and then put milk in to clean it up (whizzed on high) and the set to heat with some honey. Delicious!

  3. If I was to make this without the vanilla bean powder, how much vanilla Extract would you tell someone to add? When they make up their cup?

  4. Any suggestions for how to make it at work with limited “kitchen” facilities? Am hoping to send it to work with my husband for a mid afternoon pick me up instead of the sweet biscuits he’s trying to avoid… Am fairly sure there’s a microwave, although not always available due to client entertaining … TIA

  6. I LOVE this chai powder, and use it for so many things! Most recently in porridge and on popcorn (with a sprinkling of coconut sugar). So so good!

  7. How do I make this with warm milk in the thermo so there isn’t any floaties or bits of mix? Should it all mix in and dissolve or not?

  8. Hello do I add this to a ready made white coffee to make a dirty chai please not sure also how do I make the powder I understand freeze vanilla beans for 3 days then how to I get powder please new to thermo mixing still thankyou

    1. Make the vanilla powder first. Click on the link the instructions on how to blend it at what speed and how long are in the link. Then once you’ve made that powder you collect the other spices you need for this recipe and follow the instructions on this page on how to blend. There’s a heading named “to use” in bold that suggests how much to add to a cup of coffee…

  10. Where can I get vanilla powder from that’s no too expensive. Vanilla powder from Coles has other ingredients in it and vanilla beans are so expensive too.

    1. True vanilla bean powder is expensive everywhere, but it is worth shopping around. I went to two places on Wednesday, one was selling it for $600 a kilo, and another $420. I bought 40 gms for $17, that is in Victoria

  12. I’ve never really had chai before except as a tea, and I’m not a big hot drink person (I only drink hot chocolate which is rarely) but I just made this and had a drink of it with almond milk and a little coconut sugar – YUM!

  16. I love this recipe! I had no vanilla powder so I omitted it & typically add a little vanilla extract when frothing my milk.
    The sunflower milk from Quirky Cooking is perfect for mixing with this chai mix, if a dairy free option is preferred.

    1. With the 12 pods I’ve made 1//4 of a small 125 ml kilner jar (vanilla powder), and with all the spices mix I’ve made 1/4 of the same size jar, so my guess is x5 should give you a small kilner jar

  19. Since the ingredients are all powdered already, why do we need to mill for 2 mins?
    Am I missing something?

  20. I used to buy milk chai in India at the little roadside huts – they would boil it up in an old saucepan and it was soooooooo good. This is the closest I have been able to find to that taste I loved when I lived there!

  22. Oh yeah baby this hits the spot. I was looking at packets of chai in the supermarket last week but the first ingredient was sugar, even in the pods. Just made a batch of this and drinking a potion with almond milk while watching Dance Moms. I’m set for the night 😜

  23. This is just so delicious! I love chai and this recipe brings instant gratification! So quick and easy to make and I add a raw egg, some coconut milk and a dash of maple syrup blended in the thermomix for 30 sec and it goes so creamy.
