Bursting with flavour, this Green Pesto is delicious to use as a dip or to stir through pasta. When basil is in season, freeze some portions for easy dinners.
We use this Green Pesto in the Green Pesto Rice & the Creamy Pesto Chicken recipes in SkinnyMediterranean.
You can use this delicious, perfectly balanced pesto on a grazing board, to stuff Chicken Kievs or make your own pasta sauce.
Homemade pesto will last in the fridge for up to 3 days, I love to freeze in portions to have it on hand all the time (especially when basil isn’t in season!).
Please feel free to process until your preferred consistency is reached. I prefer to keep mine a little chunky.
What you will need:
- baby spinach
- cracked black pepper
- fresh basil leaves
- garlic
- lemon zest
- olive oil
- Parmesan or pecorino cheese
- raw macadamias or toasted pine nuts (cashews, almonds and sunflower seeds will work too!)
- salt
