Skinnymixer’s Easy Tiramisu features in the Sweets & Drinks section of the cookbook SkinnyMediterranean.
The Easy Tiramisu is a cookbook exclusive recipe…
This Tiramisu is dangerously easy. The hardest part will be deciding whether to make the traditional coffee version or the more kid-friendly chocolate version. I find a good quality Dutch cocoa powder really elevates this dish. If you would prefer to build additional layers, you can!
What makes this Tiramisu easy
What I love about this recipe is that you can have a simple but delicious Tiramisu ready to chill in your fridge by cooking a simple sponge, allowing it to cool then adding the whipped cream layers with coffee soak in the same dish that it was baked in.
I think one of the most difficult parts is standing there and poking the sponge cake with a fork (yep, it’s that easy).

- Limoncello – Make a batch of Lemon Curd from The Healthy Mix III Lemon Tarts recipe and use Limoncello as the cake soak (omitting the coffee and cocoa).

Storage and make-ahead tips
Homemade tiramisu will keep well in the fridge for about 3 days if it’s covered tightly. After that, the texture of the sponge can turn soggy and the cream may start to separate.
If you’ve used very fresh eggs and dairy, some people stretch it to 4 days, but 2–3 days is the safest and best for flavour and texture.
You can make the sponge cake portion ahead of time and freeze until ready to make. Although, it is a very quick and easy recipe – so I’m not sure it is worth doing unless making in bulk.
