Grab some chicken mince, carrot, zucchini, peanut butter, a couple of pantry staples and you will have something tasty in just minutes.
I know rissoles don’t sound terribly exciting or fancy, but the Dinners books focus on REAL dinners that are realistic to get on the table after working all day. Just recipes that you can pick up, only need to buy a couple of fresh items as you already have the other staples and can get dinner on the table without a tornado hitting the kitchen.
What ingredients you will need
- 500g chicken mince – thigh mince is best, not breast mince
- breadcrumbs – or stale bread blitzed/ almond meal
- carrot
- Malaysian Style Curry Powder
- egg
- fresh ginger
- fresh lime juice
- garlic
- honey
- peanut butter – Smooth gives the best results. If you use unsalted, it will be under seasoned.
- salt
- soy sauce, tamari or coconut aminos
- zucchini

- Gluten-free – use gluten-free breadcrumbs or almond meal.
- Nut-free – use Roasted Seed Butter recipe or your favourite seed butter.
- Low carb – Replace honey with 1 tsp compliant sweetener. Replace carrot with compliant pumpkin. Replace breadcrumbs with almond meal.
- Lower calorie – Use low-fat powdered peanut butter mixed into a paste. You can buy PB2 from most major supermarkets.
- Paleo – Replace peanut butter with cashew or almond butter.
- Go veggie – Replace mince with a 1 tin drained, rinsed, mashed chickpeas and 1/2 cup grated cheese. Double breadcrumbs and add an extra egg if needed.
- Low Fodmap – Replace honey with maple syrup. Omit garlic and pan-fry in some garlic infused olive oil.
How to Cook
- Mix sauce together.
- Blitz vegetables and squeeze moisture.
- Combine rissole ingredients.
- Form patties.
- Cook rissoles in a non-stick frypan.
How to Serve
- Serve drizzled with sauce and choice of salad or vegetables. I like to serve with boiled eggs, bean sprouts, cucumber, carrot, chopped spring onion, peanuts and a squeeze of fresh lime.
Storage & Meal Prep
- Fridge – Store in the fridge for up to 3 days.
- Freezer – Freeze rissoles uncooked for meal prep.
- Make ahead – freeze for up to three months.
