This is a delicious creamy, chicken one-pot meal that is on the table in 30 min. The recipe development team have been making double the Creamy Cheese to use as a dip!
 
I think the best way to describe it is a delicious creamy, white sauce chicken lasagna – all cooked in the one pot topped with a creamy cheese to swirl through.
 

What ingredients you will need

  • Parmesan cheese or nutritional yeast
  • ricotta or cottage cheese
  • mozzarella
  • cream of choice
  • onion powder
  • ground nutmeg
  • cracked black pepper
  • leek
  • garlic
  • carrot
  • celery
  • butter or olive oil
  • Stock Concentrate or replace water with liquid stock
  • Worcestershire sauce (gluten-free if required)
  • dried parsley
  • chicken thigh mince or chicken thigh
  • dried lasagna sheets, broken
  • cream of choice – for dairy-free we recommend Flora Plant Based Cream

Tips & Dietary Needs

  • No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock. 
  • Don’t have leek? Use onion. 
  • Dairy-free – Use dairy-free Parmesan cheese or replace with nutritional yeast. Replace ricotta and mozzarella with the Dairy Free Cream Cheese from the website.
  • Low carb/Paleo – Reduce water. Replace carrot with zucchini. Use compliant sauces and sweetener. Replace lasagna sheets with cabbage leaves. Sprinkle in xanthan gum in last step. Omit creamy cheese for Paleo and season with nutritional yeast.
  • Lower calorie – Use low-fat cottage cheese, cream and cheeses. Use chicken breast, cubed small
  • Go veggie – Omit mince. Stir through 2 tins butter beans, drained when adding the lasagna sheets.
  • Low Fodmap – Omit onion powder and garlic. Use garlic infused olive oil. Use green part only of leek. Halve the celery and use some celery leaves. Use gluten-free lasagna sheets, lactose-free cream and cottage cheese. Use compliant stock concentrate.

How to Serve

  • Serve with a spoonful of the creamy cheese swirled on top, salt and pepper to taste. 

Storage & Meal Prep

  • Fridge – Store the Lazy Chicken Lasagna and creamy cheese separately.
  • Reheat – To reheat, you may like to add a splash of water / cream to add additional liquid to it.
  • Refresh when serving – it will need some extra liquid and a good stir.
  • Thawing from frozen: Let it sit in fridge overnight, then warm gently (or enjoy cold).
  • Make ahead – freeze cooked for up to three months.
