The Jalapeño Ranch Chicken Salad is a cookbook exclusive recipe…

While the Lani has been back in the kitchen and actually made this delicious protein-packed jalapeño ranch sauce inspired by some videos that she had watched.

It was originally for a Sweet Potato Burger but evolved into a delicious shredded chicken salad bowl.

Tips & Dietary Needs

  • Protein swap – If you don’t love shredded chicken, feel free to coat chicken tenderloins in the seasoning and grill them.
  • No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock.
  • Don’t like sweet potato – You can use pumpkin, potato, zucchini or cauliflower too.
  • Dairy-free – Use dairy-free yoghurt.
  • Low carb/Paleo – Replace sweet potato with pumpkin, zucchini or cauliflower. Use dairy-free variation if required for Paleo.
  • Go veggie – Omit chicken and stock concentrate. Mix the dressing and salad ingredients through grated boiled eggs.
  • Low Fodmap – Omit garlic and garlic powder. Replace onion powder with dried chives. Use garlic infused olive oil. Use lactose-free cottage cheese, yoghurt and compliant stock concentrate.
  • Spice Level – You can adjust the chilli to your liking.

How to Cook

  1. Poach chicken and cool.
  2. Roast seasoned sweet potato in the air fryer or oven.
  3. Mix sauce together and set aside in fridge.
  4. Once chicken is cooled, shred with half the sauce mixed through.
  5. Combine with all ingredients.

How to Serve

  • Toppings – Add pepitas for crunch and fresh dill sprigs for freshness.

Storage & Meal Prep

  • Fridge – Store in the fridge for up to 3 days. Best stored with the chicken mix separate to the green salad and vegetables.
  • Freezer – Dressing and chicken can be frozen separately. Allow to defrost in the fridge and stir well to bring dressing back together.
  • Make ahead – freeze cooked for up to three months.
  • Lunchbox win – perfect for school or work lunches.

From the Testing Team

  • Linda B – A 40 degree day called for a salad and this did not disappoint. I got so excited about a recipe with jalapenos as we both love them 😋
  • Kaz M – Late to the party with this one.. but holy moly, Lani has nailed it! 😍😋
  • Haley M – Umm this is amazing 🤭🤭🤭 no one will judge me if I drink the sauce from the jug right?
  • Tara L – Absolute 10/10. That was DEE-LICIOUS! I used 29g jalapeno and 15 of the juice and i really enjoyed that and could have tolerated more. Had my mother in law here for lunch and she is not a big spice eater so I halved some grapes and tossed them through her serve to help cool it down and she demolished her bowl and had seconds. I don’t think it needs the grapes but it definitely cooled it down if you need that. I think you have another winner here.

FAQs

Is it spicy?
The jalapeños do have a little bit of a kick. If you are worried, decrease the amount and add some pickled jalapeños to your bowl when serving if you would like more of a kick.

I don’t have fresh dill, should I use dried?
No, just leave it out. You can add a sprinkle into the dressing if desired.
