- Go veggie – Omit chicken and stock concentrate. Mix the dressing and salad ingredients through grated boiled eggs.
- Low Fodmap – Omit garlic and garlic powder. Replace onion powder with dried chives. Use garlic infused olive oil. Use lactose-free cottage cheese, yoghurt and compliant stock concentrate.
- Spice Level – You can adjust the chilli to your liking.
How to Cook
- Poach chicken and cool.
- Roast seasoned sweet potato in the air fryer or oven.
- Mix sauce together and set aside in fridge.
- Once chicken is cooled, shred with half the sauce mixed through.
- Combine with all ingredients.
How to Serve
- Toppings – Add pepitas for crunch and fresh dill sprigs for freshness.
Storage & Meal Prep
- Fridge – Store in the fridge for up to 3 days. Best stored with the chicken mix separate to the green salad and vegetables.
- Freezer – Dressing and chicken can be frozen separately. Allow to defrost in the fridge and stir well to bring dressing back together.
- Make ahead – freeze cooked for up to three months.

Had my mother in law here for lunch and she is not a big spice eater so I halved some grapes and tossed them through her serve to help cool it down and she demolished her bowl and had seconds. I don’t think it needs the grapes but it definitely cooled it down if you need that. I think you have another winner here.

FAQs
Is it spicy?
The jalapeños do have a little bit of a kick. If you are worried, decrease the amount and add some pickled jalapeños to your bowl when serving if you would like more of a kick.
I don’t have fresh dill, should I use dried?
No, just leave it out. You can add a sprinkle into the dressing if desired.
